But now I have a question for you: I have seen recipes for this that use yams and flour and cornmeal (in addition to sweet potatoes). Do you know why those Jamaican cooks would use so many starches? Are they trying to achieve a particular texture? I mean, I can understand using *one* binding agent, flour *or* cornmeal *or* yams, for example. Buy why do some recipes have all *three* ? Thank you.

Is there a substitute for the molasses or can it be left out all together?
You can just leave it out and use dark brow sugar
