The reason Pernida eats Nemu is because it learned how to do so through Mayuri's Bankai. During the fight, Pernida learned several things: how to talk because of Zaraki, gained Zaraki’s physicality, developed the skin-peeling ability due to Mayuri's Bankai, and even learned how to eat without teeth. Essentially, whatever Pernida touches, it learns and copies that behavior. If Pernida touches Aizen , it will copy Aizen‘s physicality and behavior.
I perceive the dialogue between Szayel and Mayuri as Mayuri's internal struggle between the human emotions that he experienced at that moment and the evil scientist represented by Szayel. That's why he agreed with Zael in the end. Because this is Mayuri's character. But this is the first time we've been shown any human emotions from Mayuri, or at least attempts to let those emotions out.
It's nice to get an actual proper win for once instead of shinigami winning in the first half then the Quincy whips out a new power and they just body them

There Ururu did something similar to what Nemu does here and that’s because both Ururu and Jinta are artificial souls. - “Control” and “free will” are major themes here, fitting ones when dealing with “Science” and “Progress” (Even more so when talking about the Left Hand and Nemu who’ve been used, and controlled by others) Mayuri throughout this battle is leaping into the thralls of evolution, but as we see evolution is dangerous and should be approached carefully. Mayuri is clearly a character who is always in control, he prepares several times over, but as mentioned by Nemu he forgets things before coming to this battle, but how do you even prepare for combat with something that embodies evolution? I’d argue the answer is also to evolve (as shown by Nemu and Pernida) and a major point of this battle is to show the slight yet poignant character progression of Mayuri, which is why they make it a point to show that other shinigami are thankful to him. - Mayuri is weird because morally speaking he’s completely insane, his sense of ethics is completely different from ours but in his own crazy way, it’s obvious that he did in fact love Nemu in his own twisted way, so much so that since he’s made her he feels he’s living in a Dream, Nemu was perfect to him and once she died he was made to wake up from this Dream. And at the end when he reclaims her cerebrum we see him re-enter his Dream-like state, deep within the oceans of progress, where he happily sinks. (The idea the he cherished her evolution over his own life is proof of his own pseudo means of being a parent) - We learn here that Mayuri used the fetuses from his artificial soul research to reach the Bankai state, which gives clarity as to why his Bankai takes on the visage of a baby. - The after-credit scene is completely new, we’ve never seen soldiers seemingly possessed by Yhwach’s power. - Sidenote: Mayuri vs Pernida is a cool shonen take on Science vs Divinity - Sidenote 2: The title of the chapter that concludes Mayuri’s fight is “never ending dream”

So yes Kubo in fact did say that they were Artificial Souls.
Keep in mind the fight was not split up in the manga. It was just the start of the fight to the finish. So you probably would have felt differently reading the manga rather than have the anime just split up the fight and cut to the Shunsui fight when the Shunsui fight is supposed to happen AFTER the Mayuri and Pernida fight Also, Mayuri would make Nemu differently. He believes in evolution, so he would just remake Nemu but a better version. Funny enough, he did not surpass Urahara as Kubo revealed in a Q&A that Jinta and Ururu, the two children that live with Urahara, are artificial souls like Nemu that he created. In addition, in CFYOW, Hisagi flat out stated that the two remind him of Nemu and Urahara even CONFIRMS that they are like Nemu. Jinta and Ururu are Artificial Souls, not mod souls. Mod Souls can't grow up dawg. Kubo said they are Artifical Souls (被造魂魄), the same thing as Nemu. They are not Modified Souls (改造魂魄) like Kon which are something different. The translation just went with something similar but not quite accurate. KON is a mod soul. Gotta look more into the details when you fact check. The wiki ain't reliable if you use it since they didn't even bother to correct the mistake they made. Hell, they still updated all of the CFYOW stuff since the people who run the wiki have a personal vendetta against it.
