Brooke, you are getting really good with your weekly videos. You seem more comfortable, and your sweet personality shines through. Appreciate you.
I have to agree with you. It's been fun to watch Brooke become more relaxed and having fun. I am living vicariously through her adventures!
Yes, I agree. She has gotten way more comfortable, and not so stiff now.
Agreed, always feel like she’s talking directly to me over here in the U.K. love this channel my little piece of heaven ❤❤❤
You made Jason’s mouth happy 😊
go to your friends, and help her make cheese so you can see what you do that is different than what SHE does!
i think a great idea and the person about the rennet being to much water I don't think you would have over looked the measuring of the water but if did hey be a problem also play with your drops!! being nervous 1st time maybe the drop could have been longer I watch 3 times and I would say the drops could have been bigger but still IT CAME OUT GOOD just needed a little more play and i think the water and the drops are IT
I'd like to give a tip of the hat to the often under appreciated Cog Hill Farm head of quality control! Sylvester!
Brooke, your cheese must be good. Jason's reaction when he added cracker and pepper jelly tells it all. He's so cute when he likes something - he gets that smile and always talks about how good it is. I love watching him enjoy the treats you make. So glad Capri is doing better. She has to stay healthy so you can use her milk. Thank you for sharing your successes ( and your not successes).
with the pepper jelly, how good is that?
I'm so happy Capri is getting better. ❤ The chicks are growing so fast. 😊 I think he likes it. 😊 Good job! 🥰
Brooke, I love to watch your taste tester. Jason is so funny when something is so good to him. That giggle before he ever says anything is the best. Yall are so awesome. Thanks for sharing

Was the milk too cold??
If the recipe calls for 3 drops of rennet diluted in 2 Tablespoons of water, add the rennet to ONLY 2 Tablespoons of water. You added the rennet to a bowl of water and then scooped out 2 Tablespoons after that. Your rennet was too water diluted. You need the full 3 drops of rennet for the cheese to coagulate properly. Less than that causes the cheese to be too milky. Hope this helps!
It was to add three drops to a third of a cup water. Then two tablespoons. Think she should weight to do that part until right before she adds it to the milk. It was setting while the milk warmed up and it deteriorated. ❤
I thought each jar of milk was2 quarts and I thought you poured in 3 jars which would be 6 quarts of milk. That would need more rennet for the extra quart. There is such a few ingredients that if it isn’t the buttermilk or the rennet then the technique must be flawed. Maybe try using a tighter woven cheesecloth or checking the temperature pen for accuracy. Good luck, happy you got better results!
@@DebbieSimmons-wl8wq 1 of the jars was only half a jar.
@@DebbieSimmons-wl8wq I thought this TOO so I rewatched really close and one of the jars was 1/2 full
I agree 3 drops of rennet to 2 Tablespoons of water. I think your yield would be better. ❤😊
I really enjoyed this segment of the things that are going on at the Cog Hill family farm 😊
I love when the chicks get the fuzzy heads, 😍
I love that you’re so honest about your experiments!
I was intimidated by the rennet recipes, so when I came across this simple recipe for Farmers Cheese I was all in! Now I make it at least once a week. Oh, I have mini goats, so it’s usually a gallon at a time. Simply heat your milk until it is just about to a boil, then add 1/2 Cup White Vinegar per gallon to your milk. Stir gently until curdles form. Remove from heat and cover. Let rest for about 20 -30 minutes. Then do your straining through a cheesecloth and hanging. I only hang mine for about 30 minutes. I give it a light squeeze and it’s done and ready for seasoning! It is so easy! My husband absolutely loves it! It is crumbly, but you could run it through the mixer like you did to make it creamy. Please give it a try, I think you will be happy.😁❤️
Good morning glad the cheese turned out! Why not have a session with Laura and cook up another batch?
Your videos are greatly appreciated ❤❤ younse are a great couple beautiful family ❤❤
Super interesting! So glad Capri is getting back to her former self, too.
Your spouse is so funny when he taste tests and looks to go right to food heaven!! 😁
Watching the two of you supporting one another is the highlight of my viewing day. Jason is so darn cute when he taste tests ❤️❤️❤️❤️
Brooke, Since you are increasing the size of your flock, will you need to add another protection goose? The look on Jason's face when he ate the goat cheese and pepper jelly on the Ritz cracker is priceless!
I agree Cheese needs a friend.
And name it cheddar
I’ve never tried to make cheese but I do a lot of canning. So just a thought…. Cheese cloth quality varies so you may need a different maybe a tighter weave! It’s just a thought. I love how Jason is always so supportive in your projects and how he loves loves the things you make.
Well done Brook made my mouth water x
I just love the reaction on Jason's face when he tasted the cheese on the cracker with your jelly. He is in love. Brooke you are going to have to keep Jason in stock with your delicious cheese when he is watching his football games this fall. Have a wonderful day. God Bless.
Way to go Brooke!! Success 🥰😁. Jason is definitely a Professional Taster!!
I’ve cut down the time I watch videos and picked only my favorite people…. I love Cog Hill Farms, you two are my favorites, always something new and interesting and real! Blessings
Well done Brooke did really well with the goats cheese so pleased you got some to try this time. And all enjoyed practice
Makes perfect. Have an awesome day take care and God bless you 💕🙏
Hello Brooke and Jason, I love the fact that you are making your own goat cheese. And I LOVE Jason's reaction to the cracker cheese and pepper jelly! You have the PERFECT taste tester. 🤗🤗💞💞💙💙🙏🙏
That reminds me of my time as an elementary teacher. We seldom got good positive feedback from the administration but when you got special little notes from students and parents, it made you feel good about what you were doing. I am retired now, and I still have dozens of those happy little notes. Maybe you can make special little frames and make a bulletin board to display the notes.
Yes!! Make a Happy Thoughts board! That's something we all should do. 🥰😊😁
I agree with Jason, he needs an official Taste Tester t-shirt.
I agree. As a teacher myself, we call them "Smash Notes"! Makes one's efforts all worthwhile
Awesome!!!! 🤗❤️👍🙋🏻♀️
Brook, I watched Homesteading with the Zimmerman’s and she said when she makes cheese she found that it worked better for her if she waited to mix up the rennet until right when she needed to add it to the heated milk. Otherwise she had problems forming the curd. ❤
Haven’t any experience with chess making, but I thought the same thing. Something just a few degrees off when adding rennet to milk. Happy cheese adventures 🥰
I was going to recommend her to watch also. 😊
Hi Brooke, its the rennet ( animal or vegetable). Must be used within 15 minutes of mixing with water. After 15 minutes its deteriorates.
This is just my thinking, if 3 drops is good, 4 is even better😊
🐨👍
I make cheese 3-4 times a week. What type of cheese are you trying to make? Each type of cheese uses different methods. From 3 gallons of milk I can usually get more than a 3 lb cheese. It looks like you are losing a lot of the protein because the whey is coming out too white - it should be clearer with a yellow tint. I went back and rewatched the video again - the problem is over diluting the rennet. Use 2 tablespoons of non-chlorinated water in a glass dish and add your rennet to that and mix well. Then add the whole thing to your milk mixture and stir up and down motion to mix well. This method should help set a better curd and give a better yield. Also may want to let it sit for 8-14 hours - you can check you curd set with a knife - and when it looks more solid then strain into a cheese cloth lined colander, then hang as you did.
That was the first thing I noticed was the leftover rennet water left in the bowl.
She needs ALL three drops in the mix for that amount t of milk.
Thank you for catching that.
Brilliant!
I think it’s because she mixed the rennet and water before❤ she started warming the milk. So it was setting there deteriorating for a while before she used it.
@@pamskyland4444 - I do that all the time with rennet - it does not affect the curing strength
You take care of Capri, she takes care of you!! So glad you make sure the milking equipment is good to go, very important!! Love seeing the chicks, they have grown, yep, time to give them more room!! It is wonderful you have and supply totally fresh, clean eggs!! You are so close to perfecting the goat cheese!! Jason is not going to take no for an answer!!!
Brooke, you and Jason are doing a great service for your community. What a blessing you are to the community. Love your family and the videos. God bless you all. ✌🏻❤️🙏🏻🇺🇸PA
Brooke, I just love how yall use the farm for yourself and other in your community!!! Also, love how you show everything yall do!! I can't say enough about Cog Hill. Yall rock thats for sure!! I love yall and all the animals❤❤❤
Brooke, you’re the prettiest, classiest farmer I’ve ever watched! Just goes to prove you can be put together and farm! Jason too! He dresses just fine for a farmer! 😉
Brooke you’re incredible. I loved watching you make goat cheese, please please keep trying and let us know, or show us. I’ve never seen anyone make cheese, it’s very interesting. Love the colour of those red chicks, can hardly wait to see them get big enough to be running around with the other chickens. ❤️❤️
Glad Capri is doing better. Good luck with the cheese
I'm sorry to tag onto your Comment, but the YT Program will not permit me to do a Comment. Please forgive. 🙏🏼😢😊
BROOKE, A few ideas please:
1. Perhaps Capri's problems or health have something to do with your trouble making cheese.
Even what they eat makes a huge difference! My brother always had to pull up & burn the wild onions & sour weed. If the cow ate any, we had to give it to the pigs. 🤣
2. As with all processing of things that become food, it involves the mystery & magic of CHEMISTRY. 😊
3. Danielle of YT Channel Weed Em and Reap in Phoenix, AZ has several recipes, & how-to videos of several types of goat cheese making.
4. Although it's cow milk, Hannah, on Ballerina Farm YT Channel, makes mozzarella cheese often.
In each video, she offers several Tips for success. She is very cautious with the temperatures & timing of milk &the ingredients stirred in.
You Might find something helpful.
Y'all are simply Amazing. You live the dream that many of us can only precariously enjoy by enjoying your videos daily. Thank you for sharing your lives & experiences... & Knowledge, Tips, Shared Info that THOUSANDS CAN USE & BETTER THEIR LIVES.
God bless you all.
❤️✝️🙏🏼🤗
@@carolynchadwick7867 no problem.
Jason was practically dancing! I'd say that's a definite A-plus. Well done! Thanks for showing what all you went through to get there. Yes, a note of thanks is always so appreciated.
It’s good to have experienced viewers watch & give you suggestions just like our elders used to do
Good Morning, Capri looks happy and can tell she loves you trying give you lots of kisses ❤😊
Loved watching you make goat cheese-It looked yummy 😊
So glad to see Capri doing better! You are getting better and better making the goat cheese. Practice makes perfect! Love getting to see the learning process from milking to making the cheese and other goodies you make with the milk.
I love you and your husband videos keep up the good work
Yes get the Taste Tester Tshirt or an apron.
Hello Brooke, tks for video. Wow so proud of you making cheese. The results of great cheese was all on Jason body and face with pepper jelly. You make me happy with your cooking, I will always remember your making cornbread and greens...Much love to you...
Hey Jason, put that egg sign on a swivel then you don't have to take it off at all. Just a thought love watching your channel thank you. You and Brooke are the best.
Or enlarge the hole on the sign, and/or get a hook that isn't so round. It pains me somewhat to watch everyone struggle with that process.
I'd put up a solar panel to keep a battery charged run an arduino that would use a strain sensor to tell if there's eggs in there or not. Then a screen would say no eggs or eggs. Is that too much?
Beautiful little chickens. They are so sweet!
You all are the sweetest down to earth people. You have such a kindness in your hearts that it shows. Have a great day! We love ya's!
Brooke, you are so patient! Jason gave you stamp of approval!
Heather at Sage and Stone Homestead has a whole playlist of making yummy hard and soft cheeses as well as other dairy products using goat's milk. Really love how versatile goat's milk is! Chicks and Capri are looking great!
Yes, she has wonderful tutorials.
I think the way of mixing in the rennet has something to do with it. Most tutorials I’ve seen they use a flat ladle with holes and try not to break the surface of the milk when stirring.
Nifty, using the machine to clean itself. Cute chicks, too
Pepper jelly & goat cheese......yummmmm.
Good morning Brooke ❤❤
You're going to get this girl, almost there
The other thing I learned is that you can make ricotta cheese with the whey❤
Brooke I really enjoy your cooking videos
My grandmother used to hang it on the clothesline.
Thank you for sharing your success. ❤ you're awesome.
Thank you Brooke and Jason for your fun videos, they are great to watch. You guys are so loving and funny. Glad you are feeling much better. God bless you guys 🙏🏽😊❤️

You go girl!
wow Jason really liked your attempt at cheese making now you are in it for the long term ..good on you Brooke you did it
Its the Rennet Brooke!! It's very finicky!! As soon as you mix it up you have to add it to the milk!! Good luck on your cheese making 😊❤
Brooke, I think he did awesome. Just call Laura and ask her where you could’ve went wrong but I wish I could taste it.
I can’t believe how big those chicks are now! Seems like you just got them. They grow so fast.
that cheese and jelly made my mouth water
Pretty chicks!
I enjoyed the video and I am pleased that Capri and the little chics are doing well.
I had to smile at the cat enjoying the morning treat. It reminds me of many years ago when I milked my goat. I had two demanding cats, one collie dog and even my daughters filly trying to get to the milk. Some mornings it was mayhem. 😂
Stay well Brooke.
God bless your family ❤
Happy hubby right there, 😂
Yum Yum! goat cheese and pepper jelly😋
My goodness the reds are growing.
Keep up the great work on your cheese.
Awesome! Never give up. Love Jasons reaction....it's the best when something is really good and satisfying. Appreciate your channel so much.
Good morning Brooke, animals all look happy and healthy. 👍👍❤️❤️🇨🇦

Good job Brooke. Rome wasn't built in a day. Looks like Jason is completely satisified.
I love your panel picture frames on the wall in the milking room Brooke @12:50 , they’re super cute. 🫶🏻
Ms Brook I would not be afraid to try anything you make.❤
That goat cheese looks so good!!
Yes 👍🏻 please give us an update.
I thought for sure Jason was going to do a cheese dance. I loved the video. Thanks for posting.
Good job brooke❤
Hi Brook, good job. If you wouldn't mind sharing what needs to be done differently for a higher yield, it would be appreciated. I love learning through the videos.
When Jason becomes the taste tester. He acts like it’s his first time in front of a camera. 😂😅😊
Great video Brooke. I love your cooking videos. Jason is hilarious as your official taste tester.
