𝗣𝗔𝗡𝗘𝗘𝗥 𝗧𝗜𝗞𝗞𝗔 𝗠𝗔𝗦𝗔𝗟𝗔
Preparation time 10-15 minutes
Cooking time 25-30 minutes
Serve 2-4
Ingredients
For Gravy
1 tbsp Oil, तेल
2 Dry red chillies, सुखी लाल मिर्च
2 Green cardamom, हरी इलायची
4 medium sized Tomatoes, cut into half, टमाटर
½ inch Ginger,slice, अदरक
2-3 Garlic cloves, लहसुन
2 medium size White onion, cut into half, सफेद प्याज
½ tsp Turmeric powder, हल्दी पाउडर
1 ½ tsp Degi red chilli powder, देगी लाल मिर्च पाउडर
1 tsp Coriander powder, धनिया पाउडर
2 cups Water, पानी
Salt to taste, नमक स्वादअनुसार
6 no. Whole Cashew nut, काजू
For Marination
1 tsp Degi red chili powder, देगी लाल मिर्च पाउडर
¼ tsp Garam masala, गरम मसाला
A pinch of asafoetida, हींग
1 ½ tbsp Mustard oil, सरसों का तेल
Salt to taste, नमक स्वादअनुसार
½ tbsp Ginger Garlic paste, अदरक लहसुन का पेस्ट
½ cup Hung curd, टंगा हुआ दही
½ tbsp Roasted Gram flour, भुने चने का बेसन
400 gms Paneer, cut into medium size cube, पनीर
For Onion Tomato Masala
1 tbsp Ghee, घी
2 tbsp Butter, cubed, मक्खन
2-3 Bay leaf, तेज पत्ता
1 large Onion, chopped, प्याज
1 tsp Ginger Garlic paste, अदरक लहसुन का पेस्ट
1 tsp Degi red chilli powder, देगी लाल मिर्च पाउडर
1 tsp Coriander powder, धनिया पाउडर
½ tsp Turmeric powder, हल्दी पाउडर
1 large Tomato, finely chopped, टमाटर
Prepared Paneer Tikka, तैयार किया हुआ पनीर टिक्का
Prepared Gravy, तैयार की हुई ग्रेवी
¼ cup fresh Cream, ताजा क्रीम
For Smoking
Coal, कोयला
Butter, cubed, मक्खन
Other Ingredients
1 tbsp Ghee, घी
For Garnish
Coriander sprig, धनिया पत्ता
fresh Cream, ताजा क्रीम
Process
For Gravy
In a deep pot or kadai, add oil once the oil is hot, add dry red chillies, green cardamom.
Add tomatoes, ginger, garlic and saute on medium flame. Add white onion saute well.
Add turmeric powder, degi red chilli powder, coriander powder saute on medium flame for 4-5 minutes.
Add water and mix well. Add salt to taste, cover it with the lid and cook on medium flame for 5-7 minutes until the tomatoes get soft.
Add cashewnut and give it a boil. Once it's cooldown, transfer it into a grinder jar and make a smooth paste of it. Keep aside for further use.
For marination
In a bowl, add degi red chilli powder, garam masala, asafoetida, mustard oil, salt to taste.
Add ginger garlic paste, hung curd, roasted gram flour, paneer and mix everything well.
For Tikka
In a shallow non-stick pan, add ghee once it's hot, roast the prepared paneer tikka on the pan.
Basting with ghee and cook from all sides.
Transfer the cooked tikka to the plate and keep aside for further use.
For Onion Tomato Masala
In a shallow, add ghee, butter once it's hot, add bay leaf, onion and saute well.
Add ginger garlic paste, degi red chilli powder, coriander powder, turmeric powder saute well.
Add tomato and saute it well for 4-5 minutes. Add prepared paneer tikka, prepared gravy and give a nice stir.
Cook for 2-4 minutes on low flame. Finish it with fresh cream.
In a small bowl, add coal, butter and cover it with the lid for a few minutes to give a nice smokey flavor to the gravy.
Remove the coal aside, transfer the paneer tikka masala into a serving bowl, garnish it with coriander sprig, fresh cream and serve hot with roti or paratha.

I had a suggestion. How about making a series on various spices, herbs, and condiments? They can make or break flavours, and as someone who likes to make dishes from scratch, your take on the correct use of spices and sauces could really help me ace my cooking game!
