I just made 25 lbs same way but Italian and Chorizo...with Duck, Pheasant, Quail, & Dove... good way to process the meat.. I did add some extra pork fat to mine... can get a bit lean. Nice year for you guys.. reminds me of my days a K-State hunting Jeffery Energy Center, Tuttle Creek, Milford and Council Grove... in 1 day had a limit of duck, goose, pheasant and prairie chicken and missed a limit of quail by 3.. nothing like hunting in college!
Do it with ice, not water 🤣 geez, you guys did it the worse way. The ice keeps everything cool. Also keep the meet cold. I chill it in the freezer at least an hour per 25 lbs.
Aside from a couple of awkward moments of sausage closeups, this was great! Would it make sense for you to send the meat to a butcher and let him do the work for a cut of the final product?

The trick is to only grind the waterfowl meat 1 time ! Grinding it twice makes the meat like mush !!
