    Phil, My wife and I are new owners of the large HR. We appreciate your in depth videos. We recently used our dryer this week. The meatballs that were FD left a fatty film on the plexiglass. Reading the comments below we got the answer we were looking for.

      If you aim for less than 10% fat, you’ll probably have an easier time with it, and a whole lot less mess.

    Our freeze dryers have been in storage (doors open) since last November while we were renovating. I am grateful I found your video. Just deep cleaned one of FD. I figure I should also pour some alcohol down the drain line. I am ready to experiment with peppermint candies. Since we still do not have a kitchen sink or dishwasher yet, I am going to stick with candies, hoping to avoid the potential messes FD-ing meals can bring. Thank you for all your research and great information! Can't wait to see what you share next.

      If you freeze dry sliced strawberries, (it saves a lot of energy if you deep freeze them first), you’ll be unlikely to get a mess. They are a great starter item.
      We found that putting down some parchment paper in the trays, makes things easier again, especially if you’re still setting up your household I don’t necessarily have all the plumbing connected.
      Parchment paper will lift right off the trays, and you can use a clean dish washing cloth to just dust away any remaining particles of freeze dried strawberries.
      We found the same thing with freeze-drying, sliced bananas. Except it’s a lot more efficient to slice the bananas lengthwise. Then we dip them in a solution of lemon juice with honey in it. Some of us say there’s no difference in the taste, but more of us think it’s worth the effort. Especially to keep the bananas, nice and brightly-coloured. There’s a big positive correlation between how appetizing something looks and peoples’ willingness to eat it.

    I am pleased to see the scientific proof that using isopropyl alcohol is a good choice. I have had my FD for 2 weeks and cleaned it each time with IA. Thank you for taking the time to scientifically prove what goes on at a microscopic level. I appreciate this video very much.

    First time viewer of your channel, and I just subscribed because of this one video. You were recommended by a person on a Facebook freeze-drying group. My freeze-dryer has finally shipped and is supposed to be here next week. I feel very blessed to have seen this video prior to its arrival. I will follow HR's directions and let it sit for 24 hours and also perform the "bread run", but I plan on doing this cleaning following the bread run and see if that ends the odor that people talk about, even after doing several of the "bread runs". Thank you for this scientific, in-depth study, as well as your professional explanation as you were performing the tests.

      @@Philat4800feet One question, is it carved in stone to use ONLY 70% alcohol? I was at Sam's club and they had 91%, so i didn't buy it. I thought there was probably a good reason for the 70%, but I don't know what that is.

    This post has been, by far, my favorite post about the cleaning of our freeze-dryers. You teach the man to fish and share the whys so we can make educated choices. I last watched it over a year and a half ago. I'm now back out on the net researching more about the sanitation around our food prep.
    The ball valve seized on me, so in my last search for answers to resolving this, I found out that USDA only supports stainless steel for food-grade metals, not brass.
    But the parts on the tubes connecting to both ends of that ball valve are brass, not stainless. So that brass is rusting.
    I clean my machine EVERY use. So I was shocked to see what I found when I took the ball valve off. All that rust and gunk building up around that ball valve was nasty and has me concerned about how healthy it is when it's opened and all that gunk is pulled back into the chamber?
    Have you checked that, too? I realize this video is almost a year old, but I wanted to know if you have experienced this. I'm off to check your more recent videos to see if you have covered this. I still wanted to share my concerns here.

      A stainless steel ball valve would be ideal.
      Another issue to consider from the FDA is the term "Incidental". How likely will food come into contact with other substances. This is the key word when dealing with food grade vacuum pump oils and other materials. You are correct about introducing substances back into the chamber from the drain system. Many have contaminated their food when the drain tube becomes submerged in water. Cleaning the drain system is often over-looked Good thoughts.

      Freeze dry away. freeze drying with foods containing vinegar and cleaning with vinegar are two different issues.

    Phil - I normally steam clean the crap out of mine after a couple loads. Use the Lady Bug Tancs model which produces super heated steam. Just have to plug the holes to prevent moisture from getting into the line for the pump. It melts away any of the grease and grime. But it is time intensive. Thanks for this video. I can make use of the jugs of alcohol I have as a faster alternative.

    Excellent!!. I had wondered if there was a lot of germs and how I should clean the FDer. The instructions aren't very clear. I wondered about the detergent since they put perfume in all of them and that stuff is toxic to me.

    Alconox, dilute accordingly, used it everyday for lab instruments, steam sterilizers (autoclaves) ultrasound cleaners (and surgical instruments) everything stainless....and yeah, that darn pillow thingy is kinda nasty...I wipe it down with disinfectant wipes!!!!

    Hi Phil! I'm always thrilled to see you have posted a new video! FYI...I remembered seeing conflicting instructions on cleaning the chamber when reading through the HR manuals that come with the freeze dryer. In the "Guide to FREEZE DRYING", page 6, 2nd paragraph it says, "You can also wash the inner walls of the freeze dryer with soapy water or bleach." Page 15 of the Owner's Manual says "Do not use Benzene, Thinner, or Clorox for cleaning." Also, about how long did it take to loose vacuum due to corrosion on the ball valve? (weeks, months?) Thanks!

    How often do people contaminate the rack by transferring germs from the bottom of the trays that were loaded up on a counter where a purse had been sitting earlier?

What do you use to clean the acrylic door? 2. We understood 70% isopropyl alcohol would make the seal ring brittle over time, but it appears you use it without problems?

      The alcohol was meant for the stainless steel only but could be used on the door. I remove the seal and run it under water.

    Question: Since cleaning with acid poses a danger to various parts of the freeze dryer (like the chromium oxide layer on the stainless steel or the ball valves), is there also a concern when freeze drying acidic foods? Like citrus, tomato, or foods with a lot of vinegar? I ran my first bread batch with the bread soaked in vinegar, but this video is making me wonder if that is something I should avoid. I also really liked doing freeze dried oranges, but would doing citrus reduce the life of the freeze dryer?

      Over the long run perhaps without cleaning. The most damage would be the ball valve where acidic water is trapped for days until the valve is opened and drained. If the chamber is kept cleaned there should be a problem.

    Great videos! BTW, HR is no longer including a pad with new machines. I bought mine a few months ago and found an info slip while unboxing saying many users don't install the pad properly and it interferes with the seal, preventing vacuum. Fine by me as I enjoy the visual check while processing anyway

      Same here, I just cut out a disc of close cell foam, sprayed it with plastic dip and use it and it's easier to clean.

    This is a great video. I am not surprised that the towel had more culture than the chamber. Take your freshly laundered towels, place them in the bathtub with hot water and borax 20 mule team. Swish it around a few times every other hour for an afternoon and see that the dirt that remains even after the washing machine is disgusting! The water will be brown.

    Phil, I screwed up and left the door shut and now I have mold. Sounds like washing with mild soap and sterilizing with isopropyl alcohol will clean the chamber. But do I need to clean anything else…and if so, how? Hose? Pump? Thx for the info!

      Keep the door and drain valve open and give it a good cleaning without abrasives. The same with the pump. Put a block of wood under the rear with valve open until ready to use.

    @Phil at 4800 Feet: Thanks for your video. I especially appreciate the comment about the ball valve, as just two days ago the factory recommended to me that I use 10% acetic acid vinegar to flush out the drain and hose. (!!!!)
    Your tip about the rubbing alcohol is also a really super good one to have. I imagine that these two tips alone will change the way many, many people clean their machines. That is no small service that you offered with those two comments alone.
    Your microbiology techniques are a little unconventional here; I’ve never seen petri dishes inoculated in quite that matter, but you did a great job of making your point. Spores are in the air everywhere, and not just on surfaces. Sometimes we use that information to our advantage, such as people do when they want to make sourdough, or vinegar or kombucha’s or even wines without adding their own yeasts. Other times, it amounts to contamination, which is exactly your point.
    And of course yeast and bacteria are not the only things in the air. There’s a possibility that some of the contamination that you were able to culture, came from airborne contamination. There’s probably nobody that couldn’t benefit from knowing this information, and how to use it to the best advantage possible.
    Anytime we leave possible residues of food on surfaces, including the interior of the chamber, we run the risk providing a nutritious substrate for microbes to colonize our tools that are used to produce and protect our food.
    The metallurgy report that you provide is really useful; there’s probably a lot of people with no idea about the fragility of that coating that keeps the stainless steel chamber in prime shape. Thank you very much for that.
    It’s probably not a bad idea to keep an extra ball valve on hand, since this sort of thing that person might not intuitively consider when it seems that compression is suddenly lacking. If water alone can do this, since water must of necessity pass through the draining mechanism after most uses of a sublimation set up, eventually it’s probably going to happen to everyone.
    Your presentation is well worth a second listen, and as soon as I send this comment, that’s what I’m going to do.
    The information that I’m actually looking for today, has to do with cleaning. There are certain items that you can put in your freezer dryer, that no part of the information that comes with the machine, indicates can really expand upon the freezing sublimation process. Eggs are one of those. Lol. If the machine noises up, if they almost invariably do, the sensors can get confused. The machine can spend days trying to sublimate the ice formation, as with all nondry food. Nutrient matter can be drawn in the intake port in the Upper 1/3 of the machine, and my concern would be that that material kind of drawn into the pump and cause problems. I’d really like to hear if you’ve got some ideas about cleaning out that port that leads from the inside of the compression chamber out.

    Edited to fix some auto correct errors. Please note. I did not actually put a frog in the machine. That was pure auto correct. For anyone who saw that and thinks that I put a frog please note that it was only eggs.
    Update: I’ve actually downloaded The patent application with the schematics, before managing to get a hold of the factory. Actually, making contact with somebody who was not in a Third World country, and I never seen such a machine, was no small task. they need to do better in that department
    So a person can just pass a pass-through or a brush through that opening to the outside to clean it.
    In my case the hose did have to come off the machine and the pump, and it had to be cleaned out. It doesn’t hurt at all to use water on the hose, But No solvents, other than water, if memory serves. (It’s been a year since having to do this.)
    Again, in my case, the egg hadn’t actually gotten pulled into the pump. Thank God. That would’ve been a whole different level of cleanup.
    I save the vinegar for silicone hoses now, so as not to pit ball valve; And the 99% rubbing alcohol is what I use to clean the machine out now. It also should serve to preserve the coating inside the machine.
    So eggs go into the machine deep frozen now, as does anything else with a high sugar content. Lol and the moments the warranty is up, your vacuum filter is going on the machine.

      Good thoughts and comments. To prevent food particulates from getting to the pump I did install a vacuum filter:
      pneuforce.com/vacuum-inlet-filters/vacuum-inlet-bowl-filters/vacuum-inlet-filters-assemblies
      If your unit is still under warranty, I would wait.
      I'm also working with a food lab on cross contamination with raw meats, such as chicken, within the FD chamber and shelves. This should be done sometime in Jan. 2023

      @@Philat4800feet If it's not too late, as you investigate cross contamination and sanitizing, would you consider investigating Steramine tablets? It's recommended for dishwashers, restaurant kitchens, scuba diving gear etc. It's supposedly safe for rubber, plastics, stainless steel etc.

      I pour isopropyl alcohol down it. If it's really really bad (moldy), I would close the valve and pour bleach water down it until it backs up to the chamber, let it sit, and rinse well.

    Hello Phil thankyou for all your fanstic help n ideas, I so enjoy your videos your one of the best. Have you ever heard of having a terrible oil smell in side the chamber on a new FD, I'm having this big problem I can smell it 7 ' away. I'm going to clean it with the rubbing alcohol like you said n do your full leek test. It says I do have a leek and have only tried 8 loads with problems each time.       There's a check valve (one way valve) in the vacuum pump. Oil should never get into the chamber. Is it only a smell or is there any oil residue near, or inside the hose? Could one of your past foods smell like oil?

      @@Philat4800feet Hello i just found the button to reply back. I think its the glue they used on the tray holder n the connector plug go remove the trays stinks so strong n bad to. Its been airing out for 2 weeks now. They say my hose to the pump in faulty n i need a new valves for the drain hose to n this is a new mechine. Rushing out your products ends up costing you more in the long run. Did you know their moving to a new much larger building, their growing to fast. Thanks for your help i so enjoy all your videos cant wate for the next one. Have a great day 🇺🇸

      @@Philat4800feet It's a powder you add to water to turn it into a sanitizing agent. I'm pretty sure it is chlorine based. That said, I have also been using IPA and it is far easier to work with IMO.

      @@DaveSmith-cp5kj I have been using Steramine as a sanitizer and buy it from a kitchen supply store in tablet form. From their website "
      Steramine is not a Chlorine sanitizer, it is a QUAT sanitizer, or Quaternary Ammonium." It would appear to be safe for use on plastic, silicone, rubber and stainless steel.

      @@katana600dee I'm not sure why they say that because it says right there on their ingredients what the molecule is, and it does have chlorine. As the other groups attached to the nitrogen are carbon, the chlorine is likely to be the ion.
      I don't know the brands I used so there might be a different biochemical attack on bacteria, but all the sanitizers I've ever used had a chlorine smell.

    Thanks for a great report on cleaning the Harvest Right freeze dryer! Isopropyl alcohol it is. Q: I freeze dried white bean chili. I have cleaned the freeze dryer completely after this batch, but there is still a faint smell of the "chili spices.' Can I set a bowl of baking soda inside the freeze dryer with the door closed so that the baking soda will absorb the smell? Will the baking soda migrate out of the bowl and attach to the surface of the freeze dryer if the system is not turned on? Would I have to wipe down the surface again after letting baking soda sit in a bowl inside the freeze dryer? Thanks for any insight.

      The soda could become airborne and enter your pump. I would pass on the soda. You're smelling mircoparticulates of your chili, and those particles could be in your drain line, inside the back of the shelves, inside the corrugated plastic insulation, etc. A fan place in front of the door can help defrost and remove smells.

    How do you clean the hose in the back that empties water through the drain valve? Somehow mine got a little rusty. I’m pretty good about caring for and cleaning my machine, but it wasn’t working and I didn’t use it for several weeks. I just opened the back to replace parts and saw it!!!!

      The rust is from portions of your ball valve. There may be a time when you will have a vacuum leak because your ball valve ball will become rusty. If you're not freeze-drying leave your ball valve open. To clean the tube, pour a 1/2 cup of hot water with a 1/4 teaspoon bleach down the inside drain with your valve closed (do not mix the bleach with any other cleaner). Wait 60 second and release the valve, pour any remaining sanitizer down the drain. Follow this up with two cups warm water to rinse.

      In a perfect world, Yes. But removing the gasket and unplugging the wire harness over and over could cause other problems. Perhaps rinsing the drain every 3-4 loads.

    My ball valve was corroded the day I received my FD. Harvest right would not replace it because I did it myself over the weekend. And I did not notify them before I did it.

    Thanks for the research and explanation! I’ve heard a lot of people using vodka to clean the interior and put down the drain to clean the hose. Where does vodka fall on the ph scale or rate in cleaning and sterilizing? Thanks!

      Vodka is so much more expensive than IPA, I wouldn't bother with it. The main reason people want to use vodka is because of the government adding poison to non-taxed alcohol products. However I do not believe the government adds that to IPA because IPA is naturally toxic since our body cannot metabolize it. IPA can form in our bodies during diabetic ketoacidosis, so it isn't inherently deadly, and also the IPA is easily removed because of its high vapor pressure by just airing out the freeze drier after using IPA.

    I was unclear.... Do you dilute the alcohol or do you use the alcohol as is? Also, do you clean the machine after every load? I have been cleaning mine after every load with free and clear dish soap.

      For me, I don't dilute the alcohol. If you're sensitive to the smell or near equipment that produces a spark, I would dilute to 70% alcohol :30% water. As far as cleaning, if I'm doing cooked foods, I'll clean after five loads. If raw eggs and meats, after the load.

      JeffD: I had this very problem just a couple of days ago. The factory advised me to pour vinegar containing 10% acidic acid down there. Now we know that’s not so good for the finish on the stainless steel, so what I did is I put a funnel in the drain, and filled the funnel. You did a great job of clearing debris out of the drain.
      Factory also said that hydrogen peroxide was OK to use. Henceforth though I think I’ll be using rubbing alcohol.
      I do like the funnel for the reason that it fits in the drain and keeps vinegar from contacting the finish in the sublimation chamber.

      The issue is using a PH neutral cleaner. Whatever it may be. Steam could work. Be careful with the wires.

    The Petri dish demo convinced me. Thank you for doing that. Do you use the 70% mix on the heating elements as well as the inside of the door ? If we sterilize every few loads would you just wipe down the chamber with water/paper towels in between sterilizations?

      I'd wipe down what can be reached. The inside of the trays are hard to get to.

    Thank you for a very informative & in depth video. I will definitely use Isopropyl alcohol 70% to clean my brand new FD. Just wondering though, there are a large number of people who use vodka to clean their FDs. You did not mention that as a cleaning agent. Is that acceptable? Many people say that they just use the cheapest vodka they can find. Does the alcohol content of the vodka make a difference? Thanks again for all your hard work in researching this topic.

      I guess those who use vodka have a funner time cleaning. The FDA calls for isopropyl alcohol, and other listed liquids, around food and food equipment. Vodka is not registered.

      Steramine has a Ph of 20. Very high in alkaline. I wouldn't use.

      The door is plexiglass. Any plastic or glass cleaner.

      @@violet2433 Probably not. Evaporation would remove most of the product prior to using. The direction of travel (flow), within the chamber is from the frozen food to the chamber wall via sublimation. If this is a concern you could use a slightly damp microfiber cloth to clean the door.

      Never did research on the gasket. perhaps mild soap? I'd use alcohol in the deep grove to kill mold. A good place to hide.

    You mentioned in the video possibly cutting the alcohol 50/50 but I noticed you used straight alcohol when you cleaned the chamber. do I use it straight or cut it, or doesn’t it matter?

      IPA in higher concentrations is flammable like gasoline or acetone. So as long as you aren't doing something like smoking while cleaning, you are good with high concentrations. That said, it burns off very quickly so it is unlikely to cause any harm even if it does catch fire.

      I was using it full strength. if you are worried about igniting the alcohol, diluted no more than 50% with water. As far as drying time, by the time I have everything reassembled the smell is gone.

    How about Five Star PBW or Starsan used in the brewing industry? You can get them from any brewing supply store. Would like to hear your thoughts.

      I had to look PBW and Starsan up. The PH level for PBW is 12. For Starsan (Star San) is 3.5. 12 is really high on the PH scale (alkaline side), while 3.5 is about the same but on the acidic side. The better cleaners should be around 6-8.

      So the brewing industry has been cleaning their stainless vessels with the wrong stuff. They clean after every batch with PBW and for good measure they spray everything with starsan just before starting a new batch. I have not heard of any problems with it breaking down stainless after decades of use. They pump it through their hoses, pipes and valves that are not easy to disassemble and clean.

      I can't speak for the brewing industry, but... There are two issues: 1. ASTM wrote the standard A380 for cleaning stainless steel and retaining the protective chromium oxide finish and only a PH neutral cleaner should be used. 2. According to the FDA, and most health departments, only approved cleaners should be used around food. Cleaners not approved must be rinsed, and then sanitized with an approved sanitizer. For home and personal use you can clean your FD with anything. If you start selling food to the public that changes everything. I doubt any of us will ever clean the chamber of the FD enough to ever see it fail. Perhaps I'm being too anal retentive. I just believe in doing something right the first time.

    Phil thinking about using a spray bottle with 50% to spay the shelves. They are very difficult to clean because of small clearance. Though the spray would work for getting into those difficult areas. Thoughts?

      I think you would be good. The adhesive holding the heating pads is proprietary to the manufacture. Even HR doesn't know what it is.

      If you don’t have small fingers to get into around those spaces, you can use a bottle brush, along the variety of the ones people use for cleaning homebrew set ups.

    Checked for Nitric acid based cleaners. While it cleans and improves Stainless COMPOUND CR-120N for example needs a LOT of PPE to use and has PH < 1. ISO wins.

      There is a liability factor to consider. A 70:30 mix* (recommended by the CDC) will keep the vapors from igniting with spark and flame. 50:50 will still work. *(70% alcohal:30% Water)

      Looks like the PH on Envirocleanse-A is 6-7. Pretty much neutral. the SDS shows the following:
      Biocide/Disinfectant (EPA Reg. #85134-1) for use on hard surfaces as well as biocide in oil
      fracking & sour wells, disinfectant of food, and disinfectant of potable water.
      The SDS shows it's fairly safe.

    Phil thanks for your thorough process of showing the evidence. You must have worked sometime in a chemistry lab or bio lab?
    I wonder about alcohol. Can it be used on the shelf fixture? Especially worried about using alcohol on the heater element part of the shelf.. The resin and/or plastics used in the heating component may be damaged by alcohol.
    Alcohol is a close to neutral PH. But alcohol is also a powerful solvent capable of dissolving and or dry cracking synthetic resins over time. What are your thought on the shelf rack cleaning process?

      Keep the alcohol at 70%, but be aware that alcohol at this level can still be flammable. Keep the solution away from open flame or spark. I would keep it in a liquid form, not a spray.

      1. You'll need to remove the door gasket, by pulling on it.
      2. Slide out the shelf assemble carefully.
      3. While holding the shelf assemble with one hand, release the wire harness plug by pressing the release button.

      No, just the stainless steel. The makers of the pads have a proprietary adhesive. They won't even tell Harvest Right. I use warm water and mild dish detergent and rinse (wipe) serval times. I'd be careful on anything that could dissolve the glue.

      Hard to say. How often do you use your freeze drier? My FD runs 24/7 and I replaced after a year. I would occasionally dip the drain tube in water and see if it sucks up or wait for a vacuum error message.

      You're correct. Dawn is rated between 8.7-9.3 on the PH scale (alkaline) and is not approved for food surfaces. Dawn, like most dish detergents, requires rinsing and sanitizing.

      That has a PH of 3.5. This is on the acidic side of the scale. Stainless steel should have a neutral cleaner around 7

      The PH of vodka is around 4 (acidic side). Rubbing alcohol is between 6-8 (more neutral)
