The mud is clay as Mason bees like using clay soil to seal their chambers. Leaf Cutter bees will also use the house but seal the chamber with pieces of leaves. Native bees are much better pollinators then honey bees. Their bodies are fuzzy and hold lots of pollen that they spread from plant to plant.

UPDATE**: The native bees filled 22 tubes that I have saved for next year's hatching in spring.
