I enjoyed this video. I have mixed emotions about Chambourcin. I live in northern Virginia, and I go out to the wineries on the weekends. I've had a few incarnations. By itself as a red, I've had the semi-sweet version, and as you say it goes great with chocolate. I've also had it as the alter-ego in some fruit wines like raspberry, blueberry, and pomegranate. I thought it was too sour when you do this. However, my favorite is when they do a Chambourcin rose. I think that's the true calling of this grape.
