    Hi everyone, today I'm preparing a classic dessert for you, which from the name suggests must obviously be made in the month of September
    The name is precisely given by the fact that it is made when the figs, protagonists of this biscuit, are in full harvest and in the period when the jam is made... September
    Quick and easy recipe that will make you dream
    I describe how to proceed:
    First of all we will have to make and prepare the shortcrust pastry
    Then in the sifted flour we put the sugar, the pinch of salt and the grated peel of the lemon and mix. Then we add the butter and the yolks... then we begin to knead
    We knead well until we obtain the classic shortcrust pastry dough, then cohesive and sticky... now wrap it in plastic wrap and put it in the fridge to let it rest (from 30 minutes to an hour)
    In the meantime, prepare the filling and then clean the figs, peel them and obtain 500g of pulp... when done, put them in a saucepan, add the cane sugar and lemon juice. Mix everything well and bring to the heat (medium flame) to thicken (it will have to be like jam)... it will take about 15/20 minutes, then close and let it cool
    Meanwhile we chop the walnuts
    When the figs have cooled, mix them with the chopped walnuts
    Now let's put aside and roll out our shortcrust pastry, roll it out until we get a sort of rectangle (obviously don't be precise and if you want to adjust it by cutting from the sides)
    When done we put our filling in the middle arranging it well
    Now we just have to close and seal well, then cut the pieces (dimensions to your liking) which we will put in the pan with the open part (the closure) on the bottom
    Now in a hot and static oven at 180 degrees for 20/25 minutes (depending on the oven)
    Remove from the oven, icing sugar if you like and enjoy this triumph of flavours

    70g cane sugar
    50g walnuts
