Chicken Parm Soup -- Fast, Easy and Delicious

Chicken Parm Soup
Chicken Parm Soup
Ingredients:
2 tbsp. olive oil
1 onion, diced
3 garlic cloves, minced
1 bay leaf (I omitted this)
1 tbsp. Italian seasoning, plus more for topping
2 (14-oz.) can diced tomatoes
4 c. low-sodium chicken broth
2 c. ditalini, mini penne, or other small pasta
3 c. chopped or shredded rotisserie chicken
Kosher salt and black pepper, to taste
½ cup grated parmesan cheese
3 oz.mozzarella cheese, shredded or thinly sliced
• Chopped fresh basil and red pepper flakes, for serving (optional)
Directions:
1. Heat the olive oil in a large pot over medium heat. Add the onion, garlic, bay leaf, and Italian seasoning and cook, stirring, until the onion is softened, 4 to 5 minutes.
2. Add the diced tomatoes, chicken broth, and 2 cups of water to the pot. Increase the heat to high and bring to a boil.
Add the pasta, return to a boil, and cook until the soup is slightly thickened and the pasta is al dente, 8 to 10 minutes.
Remove from the heat and stir in the chicken. Discard the bay leaf. Season with salt and pepper.
3. Divide the soup among bowls and top with the mozzarella. Let the cheese melt for 1 minute.
Top with chopped basil, Italian seasoning, and red pepper flakes, to serve.

Looks good Mr. Calvin finally broke free of my house today snow and ice is melting thank goodness but more thankful I had enough food to get me through this month but I did get out Sunday got about 1000 feet from my house and couldn’t get it to go up it so I ask Jesus and said you are the pilot of this car so please 🙏 take the wheel and he did then I took another road which hill was steeper so I said Dale Earnhardt this one is for you if I don’t make it I’m joining you so I guess you might say I had Jesus and Dale helping me out. I love Soup of all Kinds! Yes, I love Chicken Parm Soup! I always add a little more Parm Cheese to give it a little extra boost and thicken slightly! I love Cheese! Lol. I also added a few Italian Croutons to mine! Crush them up slightly but not much or eat as is. Either way, its Delicious! The longer it sits the more the flavors get into the chicken and come together! Thank you Calvin for making this. Now, I'm hungry and want a bowl of your Soup! You've become quite the Chef! You need a Chefs Hat and white Shirt! Lol. I love it when you cook! You must be hungry too, had to keep tasting! Bless your heart! I hope Marie is ok, She was quite today!
