Living in the USA I miss this subtle European food culture terribly. I learnt to cook in UK but following French cuisine with a passion. Hard to find true French cuisine in USA outside major cities. I prefer traditional French not hybrid American.
Charolais cattle are lean, mean, tough, and flighty. My father raised them. After growing up eating them I stopped eating beef for about 10 years. Then I discovered wagyu.
15:21 The chicken with cream recipe was delicious. I'm hardly ever finding recipes that are simple with just a few ingredients that are still good. This is one of them. The Morels were hard to get, but this was definitely worth it. I easily upped the amount of chicken by simply adding more heavy cream, which I had also substituted for the creme fraiche. No Brest chickens here in America obviously, but this is one of those simple idiot proof recipes that don't require being exact on anything. I even subbed store bought chicken pieces and it was still great.
Best laugh ive had in ages. Kicked out of the kitchen but come rain hail or shine hell have his snails...(via the workshop ) . a man and his addictions !!
