You picked some amazing places in Toronto! Hopefully you'll come back to try more. I would highly recommend you try some Jamaican/Caribbean restaurants like PATOIS (Chinese/Jamaican fusion) and the Vietnamese restaurants here (like ANH DAO) as well. We also have AMAZING Shawarma here (all kinds, Syrian, Turkish...etc) but you might have to venture out in to the suburbs for the best spots.
Growing up, I use to love going to Carousel Bakery, I just went back last week and had the peameal sandwich and the meat was dry and salty. It was boring and I was really underwhelmed and I think I wouldn't go back after that. But Mildred Temple for the Blueberry pancake is always fabulous if you don't mind the wait compared to Cora's.
You sure love your eggs... lol. 3 out of 5 "must eat" places had eggs, the other two were pancakes and bacon... this is some sort of breakfast, brunch tour, try to expand your palate.
