What she forgot to show in the video is that most agar agar powders need to bloom before you cook it and boil in the sugar. You'll first want to mix your juice and agar agar powder in the saucepan but don't turn on the heat. Let it sit for five minutes and THEN add in the sugar, let it melt and dissolve in, etc etc. Hope this helps!

They do! Agar agar attracts bacteria very easily. It's what they use in labs to grow bacteria, actually. In my experience making agar gelatin, they must last 2 weeks tops if you are careful.
