    Karaage is SO GOOD! I want to go back to Japan so I can eat conbini karaage and Coco's curry every day, I will definitely try this recipe as well!

    Cooked this a while ago and I really enjoyed. One thing I can recommend is to pour the marinade to a small saucepan and boil it, adding some extra soy sauce and cooking sake if there's too little amount. The fat leaking from the chicken to the marinade mixed with the sauce makes it an amazing dipping sauce for the karaage.

    I just made this recipe tonight, and it's really good! It's hard to find good karaage in the US, so I figured I'd just make my own. This recipe tastes just like the karaage I had in Japan!

    Tried cooking with twice. I used Chinese shaoxing cooking wine the first time and Japanese cooking sake the second time, both turned out quite well. I tried cooking it to dark brown to get more crunchiness. 11/10 will cook again

    We recommend sake to get the authentic flavor, but yes, you can skip it if you don't have one. Make sure you put other ingredients though such as fresh ginger. Deep fried chicken can't go wrong really!

    You can skip the sake in this recipe if you don't have one. There will be less liquid, so you should make sure that chicken is coated with the marinade on all sides. The flavor will still be good.

    since their website is slow af, here's the ingredients:
    4 chicken thighs
    2 Tbsp Sake
    1 Tbsp soy sauce
    1/4 tsp salt
    1-2 tsp garlic, grated
    1-2 tsp ginger, grated
    1/2 cup all purpose flour
    1/2 cup corn starch
    salt and pepper
    oil for deep frying

    I've made this a few times. That marinade is the best chicken and pork marinade I've found. The only thing I add is some chili flake and ground black pepper.

      I mean, if it's the alcohol you're worried about, it will evaporate when you fry the chicken. It just leaves the flavour

    I've used potato flour and that works well. Would it be a good idea to use whole wheat flour instead of all-purpose flour?

    I love karaage, but my step-dad can't have wheat. Will this recipe still work if I just use corn starch without the flour?

      Yes, just corn starch will work just fine. It's called Tatsutaage and we fry more fish that way. (We have a video for that, too!)

      I have always used mirin instead of sake when making karaage. Apparently it's pretty much the same thing, but for cooking. :) I got my karaage recipe from someone else(runnyrunny999 I think) and they used mirin too, and they also use ginger in it. Very yummy. :P

      John Paul Lorenzo sake is Japanese rice wine. you can subs it with chinese cooking wine.
