Hi Elly, greetings from southern Germany! Near Lake Constance. It's fun to see that someone who is not from swabia makes Souls. We just call them "Souls" here. For the shape, mostly they are around 5cm diameter and about 30cm long. They really don't compare to ciabatta, because ciabatta has way larger holes in it. But they are delicious, yes.
Oh Elly! The loaves looked so lovely. Can not wait to be able to make. I'm so hungry, now. I love simple foods, also, and homemade hummus topped with a spicy chipotle adobo sauce and a good olive oil is one of my favorites. You look amazing, so relaxed and comfortable in yourself. Appears the dream job is good for you! Hope things are going well with family health issues...never a good time, but pandemic issues dont help. Been thinking of you and so good to see/hear you again. Wasn’t sure that mine would because the dough seemed way too wet and soft, but amazingly they had a good rise and texture. The spelt helped with that, I assume. Thank you for what you do the best, making recipes that are easy to follow and relatable.
Yes, I took the second hydration a little too far, but the final product still sprung up nicely in the oven and had a great crumb. Thank you Elly; we will be doing this one again and again.
Hello, and thank you for this interesting video. I’m from the north of Germany, and that’s probably the reason I’ve never heard of this bread. But I want to try it very soon. Only my very first sourdough starter is on day 5 today, so I guess I need to wait some more. I’ve never been to Australia, and I guess I never will since I’m terribly afraid of flying. But my youngest daughter worked at a farmstay as a nanny/farmhand near Brisbane for a year after finishing high school, and she loved it very much. She even revisited the family a year later. Anyways, I will work my way through your bread making videos, starting in a week or so. 😉🙋🏻♀️

It sounds like your starter is quite young, so yes it will be good to let it mature a bit before you make bread with it. This is a lovely recipe, I'm sure you'd enjoy it. I would love to visit Germany someday!
55 years ago I recall going to school in Canada with these brown logs, thinking how good the Wonder bread sandwiches looked all around me, now as I meet other of the Wonder crowd we talk about our lunch breaks, haven't heard a single " no I liked my glue" lol, but " wanted so to eat good bread", my Mom, and I guess I have that blood as we come from that region, my dad's family as well, In fact our dialect is know as "hunsfresan", I'll let the German speaking translate, I have my Mom's cookbook that is traditional foods, tastes of that area. It's still available for anyone with interests, but hard to read, I've forgot most of the language, never learned to read it, just spoke it growing up til school, and then we kids were the " Krauts" or when the found our Mom was displaced by WW2 we were also "DP" but life in Canada was more inclusive, as compared to the southern bunch, sadly still today. Just do my best to not repeat the crazy . But eat good food, share it too.

Well guess what, my daughter and husband bought me a mill attachment for my KitchenAid mixer for Christmas! I guess me telling them how I wanted to make bread like my Australian friend paid off

Ah that's great, I'm sure you'll love these! I make my hummus in the blender. 1.5 cups or 1 can cooked and drained chickpeas, 2-3 tablespoons lemon juice, 1-2 tablespoons tahini, 1 large clove of garlic, pinch salt, black pepper, half a teaspoon of cumin and then I add water as it's blending to get it moving (not too much or you end up with hummus sauce haha). I like mine lemony so I add a lot of lemon juice, but it's best to taste as you go to get it right.
I made my whole wheat bread with the oats starter recipe but I wasn’t very happy with it because I think I did not bake it enough but I did not throw it out I made bread crumbs with it. I think the oven temperature wasn’t high enough but I will give it another go. Thank you so much for all the Videos to day I am making the ( Swabian Souls ) but with whole grain flour plus whole wheat I will let you know how they turn out. Have a nice day .
Good on you for persisting Antionette, whole grain sourdough can be a bit challenging, but it is very worth it once you get the hang of it and your body will love you for eating whole foods! Good luck with the Swabian Souls - they're fun and pretty easy to do.
Yes you could Rosa, but I think the problem was my cheap paper my friend left me! Better quality paper would probably work better. Oil would help too, but you still need the water to make the handling easier.
As always, I enjoy how you make things easier. Can you tell me what that machine is behind you against the wall with the handle. I'm wondering if it is to roll oats and if you have a link for it? It is really pretty too!
