No! YOU should! Seriously, its stupidly easy and fun. I used to make it all the time! You will need 2 demijohns with a bubble lock bung, a normal bung, teaspoon of brewers yeast (wine), teaspoon of pectolase (if you are adding fruit) and teaspoon of nutrient. Also a handful of dried fruit and a lemon (peel and juice) and 2.5Kg of honey. Filtered water is optional. Also a camden tablet and sterilising tablets. Step one. Sterilise all your equipment. Step 2 get all the honey in a pan and add some water to thin it. Heat. Pour it into the demijohn and hopefully it should be halfway full. Add more water to cool it down til its about 3/4 full. Add all the other ingredients apart from camden tablets and steriliser). Put the normal bung on and shake the bejayjays out of it getting oxygen in there. Then store in a warm dark place with the bubble lock on. Step 3, keep an eye on the bubble lock. If it looks like it isnt bubbling any more it may be time to rack it. That is shifting it into another demijohn. Again sterilise the new demijohn, rinse and siphon it in (avoiding the precipatate at the bottom) and put it back with the bottle lock in a warm place. Add more water if required. Once it looks clear add a crushed camden tablet to kill off any fermentation. Give it another couple of days and bottle it. You should get 12-17% vol if you are lucky. Makes a real nice pudding wine. Also kicks the arse out the flu if you get infected! If you try this recipe I wish you luck, you wont need it. And it's baller!

Just getting progressively more lax with the recipe, pouring drinks a bit more liberally, laughing just a bit more jovially. The best food is made with and for friends. I also love that the crew (who obviously are friends and family of Brad's which is not usual for film crews) gets to join in on the fun! It always makes me happy when Brad tells the crew to "get in on this" and shares what he's made after filming.

I had West Coast Oysters for the first time on my first trip to California last month. They were unlike any oyster I had before. Herbal and full of fresh cucumber/melon flavors! Mignonette and a little lemon, no horseradish or cocktail sauce needed. So good!
As a local from around Morro, the lightly broiled way that Brad mentioned is the best way to eat them. We tend to have big boys when it comes to oysters, and clams for that matter, and they sing when lightly cooked.
