    Fresh Dates Burfi
    Ingredients
    10-12 fresh yellow or red dates
    1/2 cup sugar
    1/2 cup milk
    1 tbsp malai
    1/2 tsp elaichi powder
    1 tbsp ghee
    2 tbsp cashew powder
    2 tbsp milk powder
    Method
    Deseed the dates and grate the white part. Add to heated ghee and cook for 5 -7 mins, together with 1 tbsp malai and elaichi powder. Cook on low flame till moisture is absorbed for approximately 15 mins. Add sugar , stir continuously till moisture is absorbed. Next add cashew powder and milk powder. Cook till it leaves the sides of the pan. Switch off the gas and spread the mixture in the pan and cool for 30 mins. The mixture continues to cook in the heat of the vessel. Line a 5 x 5 inch tin with parchment and pour the mixture into it. Allow this to set for 5-6 hours.
    Then pour the mixture in a tin (5"x5") lined with parchment paper. Level it well. Let it set for 5-6 hours. Demould and cut into pieces .
