I'm just a palagi, but I'm interested in living in American Samoa and tasting the cuisine. This is VERY different from the fa'ausi I learned to make in Oklahoma. I make my fa'apāpā with flour and wrap it in parchment paper and bake it in an oven. We don't have access to talo or banana leaves, and I don't have an umu. I also make my caramel on a stove in water. I find it fascinating just how different the finished product is. I'm very interested in trying to authentic version one day. It would probably be less to my American sense of taste than my version, but it looks pretty good.
