    I did not expect this tomato sandwich to drum up some strong opinions, but I’m glad it did! Here are the answers to some of the common questions I’m seeing:
    1. Why did I use such a big slice of tomato?
    The point of this sandwich is to showcase a ripe heirloom tomato during the summer which has an amazing juicy texture when you bite in.
    I would NOT recommend making this sandwich with the mass produced slicer varieties that are available year round.     2. Why didn’t I add salt, pepper, or any spices to the tomato?
    There are two reasons why I didn’t add salt, pepper or any spices. The first is because I used bacon which is pretty unique from a flavor perspective as it is
    Taste - Salty (www.cookwell.com/fundamental/flavor/taste)

    Texture - Crunchy ( www.cookwell.com/fundamental/flavor/texture )
    The salty bacon in the sandwich is going to register on my tongue quite strongly before being balanced with the juicy tomato, that is primarily sour & a bit sweet.
    One of the problems I’ve noticed with all the cooking content being made is that it creates a confirmation bias for many techniques. So we see a lot of videos where people are always adding salt to their tomatoes which makes us think you must always add salt to your tomatoes, which is just not the case.
    Again as I learned from the heirloom tomato taste test I did in the video on the main channel (ua-cam.com/video/Mu2j7ib9_yA/v-deo.htmlsi=LpmrO6QjJSCYdDWZ @ 17:20) , some heirloom varieties taste great on their own and don’t need anything to be done with them.
    You need to think about all of the components in the dish. In this case, the bacon is providing plenty of salt however in other dishes, you may want to add salt to tomatoes to draw out the excess moisture or round out the flavor. For example, I will typically add some salt to cherry tomatoes if I’m using them for a salad to draw out the moisture and then strain off the liquid and use that for a vinaigrette, it’s amazing.
    Anyway, as with all the videos on the channel, I’m merely showing you one interpretation of this dish and our overall goal with Cook Well is to make you think about food from a fundamental level which is why we add those elements to our recipe pages. Have fun cooking out there!

    Try this with Zaatar, trust me it works SO well.
    My girlfriend and I are obsessed with tomato sandwiches in the summer. We use shokupan, japanese mayo, bacon, and zaatar.

    I can't believe I never thought of putting cream cheese on a BLT. Its obviously a step up from basic mayo. Also, people are freaking out about the lack of salt, but even without the bacon, a properly ripened tomato almost doesn't need it. I would add a bunch of fresh pepper tho...

    Ethan, here is a tip I "discovered" (but I'm sure others discovered it too). Put a piece of parchment over the bacon when you cook it in the oven. It prevents splatter, shortens the cook time by a minute or two, and helps cook the bacon more evenly.

    Good point on the cream cheese. Tried to make mine tangier by adding just a bit of apple cider vinegar, and the enjoyment factor of the sandwich went up by about 50%. Also added a pinch of salt and some freshly cracked black pepper, and toasted my bun with a bit of the bacon fat (Didn't have heirloom tomatos though).
    Very enjoyable and a great snack! (And yes, you do want that thick tomato slice)

    If you use a fork to open the English muffin, you can get the crispy bits and the soft fluffyness at thr same time on it.
    Thats the only way I open an English muffin.

      @@jamesandrew3668not really. It’s more about just lightly salting it to bring out its flavor, unsalted pasta water can make the pasta itself taste bland despite being smothered in a salty sauce

    I think the components of this sandwich look great! I love a thick slice heirloom tomato. I love the crispy bacon. Lately I ve been hooked on crispy turkey bacon. I don't add salt to the tomato because you have enough in the bacon and cream cheese. Everyone can personalize it too so don't shoot the host for no salt or pepper! That's what recipes are for! Either follow to a tee or modify to your tastes! You could go crazy and add garlic/onion powder too! Every I love this recipe and format! Enjoy all!

      I grew up eating what my mum just called a 'toasted bacon and tomato sandwich'. Essentially this, on toasted bread. Bacon, tomato slices (not this thicc, and with lots of pepper) and butter on the toast and mayo. Still make them all the time. No need to add lettuce.

    Made it for my wife and son. They loved it. I did a sautéed tomato egg omelette with the leftover tomato and added scratch chipotle mayo and bacon (instead of cream cheese).
    Stellar.

    "A good BLT is a tomato sandwich with bacon seasoning. Not a bacon sandwich with tomato."
    I like my bacon your way. My wife insists on "not crisp". So I always do small batches.
    Your comment on the tang is an interesting touch. We like our dairy neutral. Yogurt, cream cheese, whatever. Then you let the rest of the ingredients do the work.
    Your muffins are very good. But if you are pressed for time the "buttery" canned ones are pretty good if you can't make your own from scratch.

    looks great! the only changes I would make is to season the tomato with some fresh cracked black pepper and a dash of Italian seasoning. I agree that it doesn't need anymore salt.

    Have you considered doing a timelapse through the oven window for moments like when you just have the bacon to cook?
    Feels like it might be a nice way of keeping with the "no-cuts" spirit of the channel.

    Honestly... i just microwave bacon wrapped in papertowels on a plate. later on i got a silcoon container. it was intended for a different use but it fit 2-3 bacon slices aand the papertwoels wel

    I had a sandwich about 9 years ago while on holiday in Mallorca. It was ham, lettuce and tomato with 4 huge thick-cut tomato slices like this. I was just starting to learn to enjoy sliced tomatoes in sandwiches and burgers but this seemed like way too much. I'm happy to say i was very wrong lol. It had a bite to it.. it wasnt mushy, and it had a strong, non-watery flavour. It was so damn good that it altered my perception of sliced tomatoes forever. Sadly those kinds of tomatoes are of course not as commonly sold as the regular ones so any sandwich i made once i got home never quite lived up to that sandwich. Anyway. My point is i understand cutting them this thick. It looks over-the-top but if it's a really good tomato then its worth it.

      The difference between good tomatoes and bad/off season tomatoes is night and day. I used to avoid tomatoes because I always thought I didn’t like them but I gave some quality ones a chance and holyyyy they’re delicious

    I think i'd want this with a heavier schmear of cream cheese on the top side only, that way the tomato juice can really soak into the bottom rather than have the cheese act like waterproofing and get your hands all wet and sticky.

    Wow!! Never knew this combination existed! My favorite bagel order, besides the traditional Lox sandwich, is cream cheese, bacon and tomato! I need to try this on the English muffin though. Much easier to source English muffins than good bagels (even in LA). The combination of the nooks and crannies with the cream cheese sounds amazing. BTW, If you’ve never tried this sandwich with thick sliced hot pastrami instead of the bacon you’re missing out!!

    I’ve done a variant of this for years. On the bottom of my English muffin I have an over easy egg, break the yolk to let it seem into the bread. Tomato, bacon or Canadian bacon if you prefer, then on the top layer a leek cream cheese. (Leeks sautéed in butter blended with cream cheese)

    This is almost like a reimagining of a dish like Ottolenghi's cold yogurt with hot cherry tomatoes, but as a sandwich. I have to say if this sandwich is anywhere near as good, I understand its crushability in a serious way.

    I tried this and funny enough, didn’t miss Salt-N-Pepa. Though, I did cook the bacon in full fat butter. It was clean and healthy.

    Thick cut bacon. Haphazardly thrown into frying pan on high heat. Bacon cooks super unevenly so you get parts almost burnt and parts nearly raw. FULL spectrum

    For all applications I like my bacon thick and super crispy. I can't stand the texture of chewy bacon fat. I think i learned from ATK that the trick for this is to put the bacon in a cold skillet. Gives more time to render the fat without burning.

    I can’t believe I just watched a guy make a bacon and tomato sandwich. The English muffin is just his bread of choice. Muffin, bagel, white bread, rye bread, heck, put it on a hot dog bun. It’s a bacon and tomato sandwich. The summertime favorite. 😂

    The size of the tomato is, quite frankly, unseemly. It would do better to do multiple slices rather than something that looks like that while maintaining a juicy bite. I also think the size of the tomato means the saltiness of the bacon doesn't spread out enough and salt each bite. I'm sure it tastes good but it can be iterated better.

    Ethan!! I have bone to pick with you. the way you "wash the dishes and your hands is crazy 😂 try scrubbing the dishes and you hands with the soap away from the water and not right under cause you are immediately washing away the soap 😅

    This would only be good with home grown or a really good farmer's market tomatoes (some markets can be deceivingly commercial). But that's the point, take advantage while you can. I'll be trying soon as my tomatoes are doing pretty well lol.

    I've had some bacon and tomato cravings a lot lately. I've always called my bacon "al dente" cook it in the oven on a rack at a little lower temperature to render well, ideally it stands at attention but bites through cleanly with little to no noise. I want that meaty bite but not noticeably crunchy thought the fat is veering into puffed cheeto territory. Perfect for meals, snacks, or on a sandwich

    Ethan, did you just put that sheet pan (with bacon fat) into the sink??? First, fat will clog the pipes. Second, it's an excellent fat to refrigerate and use in future cooking sessions. Yes on the tomato slice but NO to the cream cheese. It's got to have a slather of Hellman's mayo!!!

    I love that you used "Farmer Johns" bacon. I remember when it was introduced into my local supermarket and thinking to myself: What a crock of sh*t attempt to make me think the bacon was from a local, small, farmer rather than a huge conglomerate.
    I like the basic approach of your breakfast sandwich but would add more fat (either a flavored cream cheese or mayonnaise+dijon mustard) to the top half of the bread with that much tomato.

    I love the comments here, it goes to show how many people/ would be cooks make a dish like this probably because they are too lazy and or are not capable of something more challenging or mostly want a simple easy feed.     I love the concept of a fresh tomato, quality muffin, and the cheese component. Bacon is always a welcomed treat. However, I have come to appreciate that sandwiches, the vegetables in particular, deserve seasoning of some kind. Pepper is a simple addition, but and herb such as Basil, Tarragon, or a flavored oil would enhance this sandwiches profile tremendously. Think of sandwich shops where sandwiches are good in general, yet could have had so much better flavor if the lettuce and tomatoes were seasoned. Otherwise, vegetable condiments become just an afterthought.

    I'm actually jealous that you are able to enjoy raw tomatoes in that capacity. I live in Hawaii and if I leave tomatoes untamed they will grow like a weed every year in my yard. There is a pinky sized tomato variety that birds love to eat and poop out all over the place. I've even seen it growing wildly in sidewalks by the gas station near my house. They are super sweet and mostly seeds but if you're into that I guess it's a healthy snack and maybe great for a balsamic salad.
