- Roast Leg of Lamb
Ingredients
- 2kg (4.4 lbs) leg of lamb
- 4 cloves garlic, cut in half
- 2 sticks rosemary, cut into 8 x 3cm pieces
- 4 tbsp olive oil
- salt
Method
1. Preheat your oven to 220°C (428°F) with the fan on.
2. Cut 7-8 crosses into the lamb leg, stuffing each one with half a piece of garlic and a piece of rosemary.
3. Drizzle with olive oil and season generously with salt on all sides, then place the lamb onto a tray with a rack.
4. Place into the preheated oven. After 10 minutes, reduce the oven temperature to 180°C (356°F). Continue to cook at 180°C for roughly an hour. You are aiming for an internal temperature of 55°C (131°F).
5. Remove the lamb leg from the oven and let it rest for 20 - 30 minutes.
6. Carve your lamb, and it's good to go!

I’ve always had a bit of a problem with resting cuts of meat.
Like even for a steak, after you rest it for 5-10 minutes, how do you heat it up again? Any tips for that?

charred and brittle was the only way i knew a roast for years, yet i grew up with cakes, pies, tarts and side-dishes fresh made that others remain jealous of.
@@garywebster3044eh overcooked lamp ain't that bad. Where I live we cook lampchops to hell and that renders all the fat and makes em crispy and delicious

I’ve gotten so many people like roast lamb with recipe. I also run it with Dijon mustard before I salt it. I love chef Andy and these recordings.
We also squish in anchovies with the rosemary and garlic, makes a good old kiwi roast

That would only ever work with young lambs from a supermarket. Now, I'm happy and lucky enough to get wild lamb from an acquaintance (yes, actually wild, they go where they please, drink wat they like, they got an entire hill to do whatever they want) so the meat is... not suited for roasts. Makes an amazing broth though. Even just boiling the meat gives so much flavor.

Chef, if you decide to do this recipe again, can you please give more detailed instruction on carving. Like you I tend to remove the meat from the bone in large sections, then go from there. This is a detail in the video people will miss.

I made this when I lived in Australia. Lamb was pretty cheap there. I made it because I saw the recipe with garlics sticking out of it. I thought it was pretty cool. 😂

Hey Andy! Quick question, when I rest the meat I cook after cooking, I always get disappointed that I have to eat the meat cold, how do u/pro chefs get around this?

Cover in little bit of foil is what I do
I rest the meat covered in foil. Them throw back at the warm oven for 5 min if needed
It will be warm..
Also you have to remember the gravy/sauce will be hot and so will the sides. So it's ok ;)
i leave my roasts to rest by just turning off the oven 5 minutes before it's cooked, opening the oven door and leaving the roast in the oven for 15 minutes, as the oven loses heat it slowly finishes off the cooking and when the rest period is done it is not too warm and not too hot, it's good to go without being overcooked.

Looks great but I don't agree with the stuffing of garlic bulbs and rosemary. I much prefer rubbing some stock and red wine with spices amd aromas infused in.
