Great job mentioning the North-facing LED considerations and doing a sound comparison - I had this exact set and I agree with almost every point you made. I personally let them go because they sounded very hollow and noisy as they're actually quite thin for PBT. But that helps the shinethrough, so it's all a compromise.
Coincidentally I just bought my first set of pudding keycaps myself! I went with SteelSeries "Prismcaps" because they ticked all the boxes (a few different sizes of the bottom row keys so as to fit my Corsair keyboard, a nordic layout and available in Sweden without the need to import) and I'm very pleased with them. As always things are way more expensive here so I had to pay $47 excluding shipping... But hey, at least I like my keyboard now. :)
I recently bought a set of Redragon A130 Pudding Shine Through keycaps for my Redragon K618 Horus keyboard. A note: make sure it’s fully compatible with your keyboard. My K618 is a low profile keyboard. Several keys kept popping off (Left Control, Left Alt, Escape, and even the space bar). Nothing wrong with the keycaps themselves, but not completely compatible with my K618. I’ve ordered a set of Womier low profile shine-through keycaps. The reason I’m replacing my OEM keycaps is that a few of them are went flying into the ether in my office. lol besides, I don’t care for how they feel.
Just wanted to say, it's good to finally see someone else who uses their right index finger for the space bar. Everyone I have brought this up to thinks I'm an insane person for using my index finger. I type at around 70wpm on average, and only noticed it apparently isn't normal for people to use their index to space somewhat recently. I've recently started to force myself to use my left thumb now, and it does make sense, but it significantly affects my typing speed now that I am paying attention to it. Great video by the way! Keep it up, mate.
I would be surprised if the name didn't come from that type of pudding. its like the pudding you see in all the animes and it the keys do look similar to it visually.
Ugh. I regret watching this video, cos now I’ve just spent £25 I really didn’t need to on a set of HyperX pudding caps 🙄 Also, bloody hell it’s hard to find keycaps in a UK layout… sodding Yank keyboards think they’re the only ones out there! 😂 I shall let you know what I think of them…

I just use a set of blank white keycaps, because I'm tired of the generic "gamer" font.
I prefer the Steel Series Key Caps, the fonts are larger and easier for my 50 year old eyes.
Old review but I like it. Thank you, Sir
