Great recipe, I did it without baking soda, with oat flour and swap the raisins for blueberries, also added a pinch of ginger powder, turned out amazing. Also made a glaze with Greek yogurt, cream cheese, melted sugar and vanilla AMAZING
Hello Ms. D. I have tried your recipe and its PERFECT, YES and as of this moment, 10/18/2023, I'm making my second cake. Thank you forever! Its a win, win y'all!
Making this now :) with the pulp I had leftover that was carrots apples spinach beets cranberries and celery. The batter was really good. I’m excited!! Thank you for taking the time to post this.
I have another question. You say, 1 1/2 sugar, and then you say you try to mix your sugars. You add 1 cup of granulated sugar and 1 cup of brown sugar. Is that right? That becomes 2 cups of sugar ? Correct?
Hii! My apologies. You are absolutely right lol. The recipe calls for 1 1/2 cups but what I meant was I would grab white sugar in one go and brown in the other. My cups weren't exactly full so in my head I think it works out to about 1.5. Also, if you want it sweeter.. you can add more sugar- wont hurt 😁
Hi!! I used 3 cups with this recipe. I guess you can try adding a little more and it wouldnt make much difference. But if you start adding a whole cup more, you'd probably have to add more of the other ingredients too...

thank you Diedre! i have to look but I had an old Hamilton Beach juicer and there was an option to add pineapple --added yum.
Love this. I've made it many times
You had me at I don't put frosting on this. Just got a brand new juicer and enough pulp to feed an army! Ty!
Good luck!
Nobody needs frosting when they are sweet...or ginger. JS
You can also use the carrot pulp for golubtsi also known as Russian cabbage rolls
Wow, this cake looks amazing, can't wait to try it. I just got my juicer yesterday
Hope you like it!
I just fresh carrot juice and don't want to waist the pulp so the Q I have was that three and a half cups of flour into the wet ingredients ty

Question- if I was to use Almond flour instead of regular flour what adjustments should I be making?
Honestly, I have no clue! never used almond flour before.

I don't use corona oil, can I use olive or coconut oil?
Hi!! I am not an expert in oil types, but I would think any oil would work. Try it!
