Kenny, I found out how to override or avoid the glitch where they just sign a one-year deal. You can either offer them a contract & then decline it (assuming they accept) during the moratorium, then when the moratorium ends, anything they accept will be the contract you offered & they accepted. Or if they're a coveted RFA, just wait to match their contract offer
Just do it on day 3
just offer the contract after moratorium ends then there's no glitch
Or you can go in after the fact and change the contract manually to reflect the offer you originally gave. Just go in the player’s menu.
