I learned something somewhat similar to what Bob mentioned when repainting a room recently~ My dad told me that wheat paste was used as a cheap and somewhat effective way to fix wallpaper to a wall, but such was not supposed to be done in rooms like bathrooms that could be very humid and cause easy mold growth~
I suspect there are at least a thousand ways to cook rice noodles in China. And probably plenty different types of rice noodles. We have about 3 types here, which is more commonly used but that thick rice noodle you just had isn't seen here.
