This is the story of Idrees Biryani. Abubakr, the owner of the shop told us that this forfathers used to work for the Royal Family of Lucknow back in the day. About a 100 years ago the family moved out and started selling biryani on the streets of Lucknow.
Today Idrees' Biryani is a favorite among the locals, so much so that it sells in Quintals not kilos.
But its not called Biryani! What is it called and why? Watch the video to find out.

@Virat Sharma actually you are wrong. I am an student of elective Urdu/Advanced Urdu. It's nit percentage or what not. Urdu is simple a mixture of all the languages in the world. It's like all the languages were put in a box and then they shaked the box hard and the language came out was Urdu. It was born in India and it will always be an Indian Language first

The chef/owner is so humble down to earth.hats off to him.i have watched him in 3/4 shows.his behaviour is more subtle and finer than his India famous Biryani.
I had been there and had this Biriyani...The place looks really run down but the Biriyani is totally out of this world... Really one of the best mutton biriyanis I have had in life.. 10/10 for the taste...

I am a Hyderabadi and I feel I should also try out this Lucknowi Biryani as I feel the procedure of making it is something special.

I have lived in major cities and tried their signature delicacies. I can assure you that Idrees Biryani (Pulav) is the best.
No one can dislike (from Moradabad, Kolkata, Hyderabad or any other place) rather they will start wondering if what they have been eating in the name of Biryani doesn't stand a chance in front of this heavenly blessing.

I work in Bahrain and local Bahrainis, Keralites, Tamils and even Pakistanis talk about Hyderabadi Biryani taste.
For your kind information during Nizam rule, Hyderabad had 12 kinds of Biryanis.
And one more thing: in Hyderabadi Biryani we don't add sugar; we add sugar in sweet dishes. 😁😁

I think you are mistaken, Hyderbadi is more popular and #1 choice among the fans. This is unique as well but Hyderbadi dum biryani with kachchi yaqni will always be on top. You can compare the preparation methods and can easily tell which one is more sophisticated.

Just went to lucknow from kathmandu nepal to have this special thing . I don't think I've ever been as happy to see a plate of biryani as I was to see this
This is at Idrees in Lucknow.
We reached Idrees at 1 PM and I was supremely thrilled to get a plate of piping hot biryani .
The rice, a short grained version called arva, tasted delightful and was packed with flavour and fat and the mutton was delectable.
Seeing our glee, they served us some extra rice with khurchan. Khurchan is the much sought after burnt and crispy bits of rice from the base of the pot in which the biryani is cooked.
The cooking process at Idrees from what I gathered involves three steps. The goat meat is slow cooked with spices, milk and cream. The rice is boiled separately and the water is drained out. Then the two are put together in a sealed pot and cooked in the dum process. Half a plate of biryani costs Rs 110. It's been mutton here for a while and not water buffalo and is served with some gravy on the side

I was warned earlier that Idrees is not the pleasantest place to eat in and that many pack their food and go. Well yes, you have to be a street food buff to eat there to be honest but having the biryani straight out of the deg has its own charm

You are a fantastic host and your food vlogs are second to none. As you highlighted the food, the very eminent Nawab Saab’s mastery commentary adds the aesthetics to the flavor. Never have I ever enjoyed watching this combination where it seems the spoken word actually compliments the end product. I am watching this from the USA and wish that I would have the pleasure and the honor of sharing at least one meal with the Nawab Saab.
