My great-grandfather was a forester in Bavaria. They used everything from harvested animals. I love going through my mom's and grandmother's cookbooks with the handwritten notes - I have mom's old pressure cooker with the weight that jiggles when it releases steam. It truly brings back memories of being in the kitchen with them -- mom and grandma seemed to always have an apron in unless we were going to church

I cut meat for 36 years in Houston Texas. Houston is a pretty diverse city & I learned lots of different techniques in various area. While working in one area was turned on to swinging steak. Swinging steak was whole oxtails on the smoker. Your pressure cooked Ox Tails looked fantastic. I have a few packages along with some short ribs that are cut into flanked ribs. My plans were just to smother them in a thick roux with the holy trinity & go over rice. I really do enjoy your channel & seeing how its done in your area.
Love me some ox tails .This looks delicious. These are the best for a good vegetable soup .what flavour !!! and I love them in my pressure cooker with potatoes diced and celery ,little garlic onion and good brown gravy ,omg ..Tku for another great recipe..
I’m glad you made that comment about a $400 dollar cooker is the same as a $10,000 cooker. I wanted a offset. I thought that would be better than my Weber kettle. I’ll save my money and fuel and buy brisket and now oxtails. I never seen anybody do oxtails on a smoker. Great idea!!!!

Great cook Bro Southern Style, Oxtails look delicious. Will have to try the hoisin sauce, that's a different touch. I pressure cook my oxtails also, cant see myself on the grill with these for the 5+ hours it will take to cook them completely on the grill. Plus the low temp that you have to maintain. Pressure cook for 35-40 min. then smoke for an hour or so, done.
This is ASMR bbq, so relaxing. Also if you don't make a seasoning or sauce called Pit Master's Taste, you're missing an opportunity. Keep up the awesome videos, don't go anywhere.

Giving that I live in Dublin Ireland oxtail stew is something I love the next time I make a pot I'm going to cook the oxtail the same way it's something I never taught about doing with oxtail but that looks damn good cheers friend

I had a spot where i used to get them for around 2.25lb. From a rural place like 40 miles out in the country that nobody in the black community had even heard of.they wasnt familiar on how much in demand they were in the black community. I messed up and told 1 person where it was, i would never tell anyone. Needless to say she ruined the hookup now they are on par with everybody else $7-8lb. I was furious. I told her not to tell anyone

I was thinking the same thing, there a UA-cam man who sales his oxtails he smoke them first and then braise them. But these way looks good too.
