I come from an abusive background so getting yelled at by my executive sometimes triggers me. I never lash out but as a stupid I'm very scared to make a mistake. The professional kitchen is a different environment compared to mom restaurants

i think if you do a deeper analysis of marcus' character, it is a beautifully written scene. i thought they actually nailed it. when the take out orders started and carmy is having a meltdown, i guessed marcus, being a sensitive guy, as the one cook who would buckle under the pressure. it's my interpretation that this was marcus' first taste of what a crisis during service is, and given his sensitive nature he mentally shut down and chose to withdraw from the situation. it's no surprise that he quit.
though most cooks would respond to a screaming chef with a sense of urgency a la "crisis mode", marcus is not from that escoffier brigade background. never mind the michelin tweezer tasting menu scene, marcus has never even worked at a proper full service restaurant. everything he learned about fine dining and those chefs he heard from carmy's anecdotes. marcus romanticized the precision of the fine dining chefs, without coming to know the often toxic and abusive culture that came along with that pursuit of perfection.
