Here's MY Theory: The stars could represent how many times *in a row* you've beaten the entity and made it to 7am. This also explains why you lost the star when you died to the entity after to see what happened when you fell asleep. If they (the stars) represented different endings then don't you think you would have gotten a star for dying earlier in in the game because technically dying is an ending. This is just my theory, love the video Think!
The stars in other ZedTechnician games were endings, Not how many times you've beaten it
