I don’t wet brine…. Occasionally i will dry brine and I often inject half a pound of unsalted butter. Take what you like from three or four recipes and make it your own ⚡️🤙🏽

I usually Brine mine over night-wet brine. Any reason not to? Also, how long did you let it rest? Looks delicious!

I'm rolling with a herbed butter injection, then some of the seasoned butter under the skin on the breasts.
