    I usually Brine mine over night-wet brine. Any reason not to? Also, how long did you let it rest? Looks delicious!

    Bland? I thought some sort of brine was generally accepted as a basic requirement. Curious why skip that, in some form. Even with a bunch of butter…

      I don’t wet brine…. Occasionally i will dry brine and I often inject half a pound of unsalted butter.
      Take what you like from three or four recipes and make it your own ⚡️🤙🏽
