Make the same way along with a splash of Worcestershire when adding the onion. Toast the light bread.

That fat you drained from the meat isn't just fat, there's a lot of water in there, and that water has a lot of flavor.
I would cook the meat on high until all the water evaporates and it starts to get all crusty and stuck to the bottom. That's great, brown beef flavor. THEN drain the fat off and cook it how you normally would.

So a bit of advice, and take it if you want. Make a hole in the meat when it gets brown. Most of what you’re straining off is water. Not a lot of it is fat. If you keep cooking the meat it’ll get nice and dark brown, which is a ton of really good flavor. Add in the onions once the water is cooked off, you’ll tell the water is cooked off when it starts sizzling instead of hissing/steaming. If you cook the onions in that the dish won’t be greasy either, and if you want you can strain it afterwards like you normally do. :)
But since you add in flour, don’t bother straining it! The flour will attach to that fat and will help the flavor of the whole dish. Like creole or French cooking, a good roux makes a good dish :)

Back in the 1960s when there weren't no food stamps for single working mother's, ours made this dish at least once a week. Over bread, potatoes, rice
or noodles. I'm gonna make it this week with an added can of mushrooms.

Try making it with jarred or enveloped brown gravy. Serve over whipped potato. Another version is to mix it into mac and cheese. And sometimes I add a can of diced tomatoes to the meat mac and cheese. Some pepperoncini peppers can make it sing.
