    It took decades to find the best way to eat. I accidentally stumbled onto these talks with Mills, Gregor, McDougall, Stanger, after years of seeking a better diet. I marvel at how I survived what I did to myself through a high protein diet. And I also find it amazing how much people resist hearing about it. I do it too. I recall soy milk from the 70's as tasting like turpentine, and only today tried it again. Wow was I wrong. It's the best tasting stuff. I guess illness opens ones mind. I lost 25 years. Now I'm free.

    Very good talk!
    The closing comments are a testament to my experience on a vegan diet. I have only been vegan for 7 weeks; my energy is through the roof, I am hardly tired, aches and pains are gone, no headaches since starting, 17lbs gone and my general confidence level is way up. I wish I had done this 20 years ago.
    I have abstained, the majority of the time, from dairy since 2011.
    I have only ate meat once per week for about 6 months before going vegan, so it wasn’t a difficult transition. I am very surprised at the results, given that my meat consumption was quite low to begin with and that I ate dairy very intermittently.
    For anyone who eats a bad diet right now and wishes to change, make a plan and transition over a period of say 3 months - where ‘no meat Mondays is a start. Good luck!

    I watched one of her talks on Vegan Society of Hawaii and it was very good as well. She has a very calm delivery.

    I went vegan about six weeks ago, and every morning I try to find a lecture or something of educational value on the subject. It keeps me motivated and educated at the same time. This lecture proved to be both. Very informative. Thank you.

      Same here. The research side of becoming vegan has been just as satisfying as the culinary side. Janice and other doctors here on youtube have been a treasure for me in forming my health views.

      I’ve learned much valuable information from these talks.
      I thought about going vegan 20 years ago , but have only been vegan for 7 weeks now. Energy is through the roof, I think not using any cooking or oil dressings is partially responsible too. My aches and pains are gone, together with 17lbs!
      The very best to you on your choice of going vegan, I’ll Never go back - here’s to plant power! 😊

    I have always liked to eat beans cooked with ham hock, fried potatoes, buttered cornbread and thought I might not enjoy just beans, boy was I wrong.

    My parents always had vinegar on the table to make eating vegetables like broccoli more enjoyable. Of course, it is used in most salad dressings. Some bean recipes call for a little vinegar to be added. Is there any downside to using vinegars to make food more palatable? Are any of the nutrients destroyed or lost when adding vinegar to foods and recipes?

      Calvin Burr vinegar won't change the caloric or nutrient content of the things you're eating. The only "concern" with vinegar is excessive use can damage teeth a little, but you'd have to be using it pretty heavy.
