    Ingredients (for a 7-inch cake)
    Wet Ingredients
    •½ cup curd
    •1 cup powdered sugar
    •½ cup oil
    •1 tsp vanilla essence
    •¾ cup milk
    Dry Ingredients
    •1 ½ cup maida
    •1 tsp baking powder
    •½ tsp baking soda
    Method
    1. Whisk together curd and sugar very well until the sugar dissolves.
    2. Now, add oil whisk again and mix in the vanilla essence and ¼ cup milk. Set aside.
    3. Alongside, preheat the kadhai. For this, take a kadhai, put salt in it and spread it evenly. Then, place a stand as shown.
    4. Cover with the lid and preheat on a medium flame.
    5. Grease your baking tin and line it with baking paper. Set aside.
    6. Now, sieve the dry ingredients into the wet Ingredients. Combine them well by slowly adding the remaining half cup milk.
    7. Keep mixing constantly until you get a smooth, lump free batter. DO NOT OVERMIX.
    8. Transfer to the baking tin immediately and bake in the preheated kadhai for 45 mins. ( if you’re baking in a preheated oven, then bake for 45 mins at 180°C)
    9. To check the doneness, insert a skewer in the center of the cake. If it comes out clean, it’s done.
    10. Remove, brush with some milk and unmould.
    11. Cover with a damp muslin cloth and let it cool on a wire rack. This prevents soggy bottoms.
    12. Once cooled, slice and enjoy!

    - MEASUREMENTS are absolutely essential. Make sure you are measuring the ingredients accurately.
    - NEVER OPEN the OVEN while baking. This disturbs the baking temperature and in cake baking, this is a must.
    - Always mix in one direction.
    - Sieving the flour helps to make a light cake.
    - If your cake is rising and falling down - There are 2 reasons:
    One - Too much moisture in the cake.
    Two - The cake is under cooked in the center so you haven’t cooked enough.
    The best way to make sure the cake is not undercooked, once the toothpick comes out clean & the cake has a good colour on top, cook it further for 5 minutes by reducing the baking temperature. This will ensure that the cake has been cooked all through the center.
    - Never OVER MIX a cake batter. Over mixing will develop gluten and give you a chewy cake. Minimum mixing is the key.
    - Always cool a cake on a wire rack. This is very important for the cake to be super soft and at the same time not have a soggy bottom. Make sure you gently cover it else it will lead to drying.
    - All ingredients should be at room temperature unless specified otherwise.
    - Prepare your baking pans before you start anything.
    - Eggless cake batter DO NOT NEED TO BE RESTED so once you’ve made the batter, make sure you pop it directly into the PRE HEATED OVEN.
    - CAKE BAKING ALWAYS HAPPENS IN THE MIDDLE RACK WITH TOP & BOTTOM RODS ON.
    - BE PATIENT - When the cake is out of the oven, it is hot & delicate, give it a few minutes before you un mould this else it will lead to you breaking the cake.
