    Actually only in southern region near Syrian border (hence the accent ) food is spicy because its near trade routes , but when you enter rural areas, even central Anatolia ,or east Anatolia , fresh or dried herbs ( dill, thyme , parsley , green onion, fresh mint , garlic ,butter and onion are used for aroma ,
    Regional foods are not spicy at all . Turks know a few spice names , black pepper, red chilly cumin, cinnamon, cloves, black cumin ,sumak all spice ( köfte baharı, dolma baharı ).and we use them lightly. Cinnamon and cloves are only deserts . We don't use in meat dishes.
    Cardamom , ginger ,galangal ,star anise turneric ,curry tanarind are unknown until recent modern times ( only palace cooks were using some of these in historical cuisine)
    I ate many different cuisines Chinese Indian, Vietnamese Mexican Compared with these Turkish food can be only half spicy Usually we marinate our meat with only salt and onion , Turkish cuisine doesn't have sauce ) spice often not added in ingredients but comes as an option ( spice bowl, pickles , black pepper bottle ) So if you want spicy food you should order it spicy.

      Yes, but as the video mentions people from all over Turkey migrated to Istanbul so there's a bit of everything there.
