Good stuff. Wow, every video with Nishiki Market in it that I've seen has shown so many different vegetarian options there, so I'm looking forward to visiting there. I'm also seeing a lot of recommendations for Chao Chao Gyoza. I admit I am a little disappointed after seeing the incredibly enticing onsen/ryokan that they had no vegetarian options (which was the main point of the video, was it not?) but thank you for the rest of this great video.
It is hard to find vegan/vegetarian options at most of the traditional ryokan as they pretty much do a set menu of traditional dishes (mostly fish). If you are looking for an alternative I have stayed at a Buddhist temple outside Osaka that only served vegan food as the monks there were vegan. Very tasty and it did have a public Onsen as well.
