No its Arroz mamposteao. It a Puerto Rican fried rice. It done with rice, beans, longaniza and usually diced sweet plantains or squash. You eat it cheese, avocado and fried eggs on top. Chofán is just Chinese fried rice here in Puerto Rico.

When English cooks try to do anything not European, it’s a disaster.
A lot of Latino food is European, because of colonisation 😂 e.g. Portuguese and Spanish. Also, anybody can learn to cook anything, it’s when people deviate from original/traditional recipes that things go wrong like this 😂
Why? Is there something "sacred" or "magical" about non-European ingredients and food that when English chefs touch it, it turns to sh*t?

@@jdsrne22 No my dude these are recipes that come from native indigenous and African influences. There is a reason people of color are praised for their cuisines. They’ve created and mastered cuisines that have no hint of European influence. To praise Europeans for most of our culinary creations is a slap to the face to every latino culture outside of “white” culture. Natives and Africans were cooking and making dishes long before they were colonized. We’ve combined dishes and shared dishes but to say it’s all European is inaccurate. Beans alone come from Central and South America and a very popular side dish of Latinos. People of color truly can not have any recognition without someone praising whites even when they have nothing to do with it, smh.
Edit: Portuguese have nothing to do with anything because we are latin due to the Romans. The Romans conquered over 50 countries, Spain being one of them. My dude please learn accurate history. Puerto Ricans specifically, have nothing to do with the Portuguese people.

I’m so glad someone did this because I saw this video from Gordon Ramsay and I’m Puerto Rican. I was shook watching it because it was so so wrong. Like he did no research at all then was like oh this is authentic. Umm no sir!
My friend Mariam, taught me how to make pegao! After cooking five pounds of rice, I perfected it! She’s says I’m an honorary Puerto Rican! I would have never wanted to make it MY way, only authentic!💯👏🏾

There is a similar Persian dish, Tahdig. I'm not so sure if, just like one of the moms said, that Pegao came from the Tainos (I guess that's what she meant when they would be rolling in their graves). Puerto Rican cuisine has elements from African, Arabic, European, Arawakan and Taino cultures.

Pegao reminds me of Persian Tahdig, which is the same thing essentially, we intentionally cook the rice a bit more and even add potato, or noodles to it sometimes!

The worst part of it all is that he blows a gasket and gets super offended when one of his dishes isn't recreated, to the last detail, by one of the contestants from master chef or hell's kitchen.

I’m Puerto Rican and love arroz pegao…but also at the end of the day all it is is burnt rice… these people are taking about pegao like it’s a cuisine…it’s just burnt rice. If Gordon would make “traditional pegao”, he would be standing there for 5 mins showing us how to burn rice. sometimes my people are something else. Also for some reason they don’t show what it actually would look like in the video cuz again it’s just burnt rice at the bottom…not a fancy dish like these woman make it sound like. Our culture is not about BURNT RICE!!!!

Estamos de acuerdo el pegao normalmente no se hace así. Pero no se ofenda porque Ramsay hiso lo que le dio la gana con el pegao y puso los dos huevos en el plato! LMAO! Señora no se ofenda pero el pegao no es una receta en si. La receta de Ramsey no es mala, esta chévere y no sabe nada mal. El hiso pegao evidentemente! Su receta es pegao con otras cosas mas. Pero, es necesario que usted comprenda que el pegao es solo un producto marginal del proceso de cocción del arroz a discreción del cocinero. En realidad no existe una receta específica de hacer pegao. Usted solo tiene que echar un poco mas de aceite en la olla, subir el fuego un poquito y dejarlo un poco más de tiempo al final de haber cocinado el arroz. Lo único que requiere es estar pendiente de que no se le queme, o se le humee el arroz. No require absolutamente nada del proceso de Ramsey. Ramsey solo interpretó el detalle del pegao de un plato y produjo una receta no de arroz, sino de específicamente pegao con un sabor especifico. Es como hacer la receta del frosting de bizcocho sin el bizcocho, la comparación no es muy buena pero funciona, mas o menos y creo que usted lo puede entender ahora.

I'm also Puerto Rican, but I love to switch up ingredients in my dishes all the time! There is nothing wrong with it! Unlike the people in this video complaining.
The Pegao we eat in Puerto Rico is when u make rice, the oil that u use to cook goes to the bottom of the caserole, making the rice at the bottom stick together, and get crispy and crunchy with a yellowish color, and giving it an unique fried flavor to it. IT IS NOT the same as Burnt Rice where the bottom is all black it is definitively NOT what Gordon Ramsay is making.

The problem with chefs that do this is they title and present dishes to be authentic to w/e culture it’s from. I’ll say the same thing I said about Ramsey making huevos rancheros, and Rachel’s pozole: it looks delicious, but you CANT call it pegao when it’s your version of it and inauthentic to the way it’s supposed to be made. This is how you get people that eat your pegao and assume that this is exactly how Puerto Ricans make it, which is misleading.

Now I wanna know what and how Pegao is made. Sounds very interesting.
Pegao is when you make rice in a caldero (our version of a cauldron google 'caldero Puerto Rico' so you can see it) so bc the rice is cooked with oil the rice sticks to the bottom of the pot and it comes out very crunchy. Many times it happens as a result of you forgetting that you're cooking haha. But many people (myself included) do it on purpose. Pegao means glued or stuck so it's called that way because the rice is stuck to the bottom and you have to scrape it off. You can do it with just plain white rice. If you want to make it at home you can use an aluminum sauce pan and you'll get pretty much the same result. Just add the oil first just enough to fill the bottom not too much then when it starts getting hot add your rice, then add water and salt. Cook at medium heat uncovered. When the rice starts to dry (you can stir it if you want but don't scrape the bottom) that's when you cover it and put it on low til it's cocked and when you serve the rice the bottom should be almost burnt but not all the way there. That's pegao! I hope you try it out and it comes out! 😊

Sounds simple enough but I'm assuming it has a good flavor. Thank you for explaining what it is! Now I gotta find a good authentic Puerto Rican restaurant here in L.A. so I can finally try Puerto Rican food.

Yeah...pegao is that thing you made with the rice and beans.. you pretty much accomplish it by letting the rice overcook a bit.... In the d.r. its called "Concón".
I personally avoid letting my rice stick...but there are days when you actually crave it....
Oftentimes in dominican diners they serve that crunchy rice to customers who want "concon" con habichuelas...
And usually if you happen to make a rice with beans in it or with meat in it, and you get the pegao, then scrape that and pour some grease on it....like from sauteed meats you may accompany your rice with....

Gordon ramsay is trained in French cuisine and that's it. I find his takes on Indian food offensive so I can understand why these Puerto Ricans were mad lol. These tv chefs are one cuisine trick ponies and you realise that when they cook your(i.e. non european) cuisine. Rick stein is a rivered chef for his fish yet I've seen him leave many of his dishes raw on his India journeys

Please do an episode of portuguese people reacting to Gordon Ramsay's "bifana". People are going crazy in Portugal seeing what he cooked, that he calls a traditional bifana. A few months ago he also made a "traditional portuguese breakfast" that makes no sense, but the bifana is just sacrilege.
