This was very helpful for someone who is “just starting” (I can cook and bake, but now I’m on the adventure of elevating it, not just making ok enough for home) I’m assuming the same rules apply for using a hand mixer? I know it’s not going to be as smooth, but currently that’s what I have.
I'm so glad you found it helpful!! 😃 Yes you can for sure use a hand mixer! The mixing won't be exactly the same, but it can do a good job! Just go by looks and texture rather than following these directions exactly and you'll be just fine!

The shops I've been too have filling so light and airy, but I can't find a recipe for the filling. Is buttercream icing going to be the same thing? Or is it something different for filling a truffle? Ohh thank you!! I know exactly what you’re talking about! I also am working on figuring out how those are made. I’m guessing it’s very close to buttercream but there must also be other ingredients used to extend shelf life! Stay tuned, I will research this and see what I can figure out!

Oh and still use the lowest couple settings to avoid adding additional air into the icing :)
