Chickpea salad is another one of my favorite meal preps for the week. I do it without the avocado and feta, but add in red onions. It's so easy to dump in a to-go container over some salad greens and take to work. Perfect lunch!

Oh my gosh! This is THE BEST salad I’ve ever had! Not kidding. It’s so rich and delicious. Very important to use the best ingredients you can find! An awesome olive oil and the best Kalamata olives make a huge difference; so much flavor! Thank you!

I make this on Sunday and have it for work lunch all week. I add grape tomato halves, red onion and cooked farro. Sometimes I make a balsamic vinaigrette instead of lemon. Love it!
@@tsubakirina256 I’ve never had it go bad in the 5.5-6 days I’ve had it. I eat it every day on top of some greens for extra veg and it has never gone bad. Maybe the balsamic vinegar prolongs its shelf life?

I have been making a chickpea salad for the past several years. It is absolutely one of my top 5 AM favorite salads because you can add just about anything you want. Sometimes I add a little bit of grilled chicken breast for extra protein but my basic ingredients are chopped red and yellow peppers, chopped red onion, chopped cucumbers and chopped fresh zucchinni(but I seed them because of water content. I switch between 2 dressings...l.olive oil, garlic powder and dried oregano or Good Seasons zesty LIGHTLY COATED. FABULOUS TASTE -and soooooo good for you. Also I use pickling cucs to add a little lll
I am with you I really prefer a 1:1 ratio. I just made this and it is delicious. I used Italian parsley and dill because it was what I had on hand and diced up some grape tomatoes. Thanks for sharing your recipe

I found you by searching for the pet food recipe, which im making tomorrow, and this chickpea salad popped up, and I knew it was the right channel for me. I just made the salad with the additional boiled eggs. I used a small jar for the vinegarette. It was absolutely beautiful. I will serve it with a bread roll and real butter next time. Perfect for a bbq or take a plate too.

Dani, you went absolutely crazy with this one. Whenever I make salads, they are so mediocre and made eating so boring. I made this, skeptically (of my skills not your) and low and behold I couldn’t believe how great it tasted. I did everything you did exactly and oh my gosh u could not believe it. I had to re taste it 7 times cause I couldn’t believe it. Okay girl I rock with you NOW 💯
Your recipes are awesome. We are having friends over for the 4th and definitely will do this. I’ll let you know how it turned out. Love the fresh herbs touch a lot. Might add pine nuts (mediterranean soul kicking me in the back!) maybe
This looks so yummy! I would do a couple of substitutions though because I don't like olives and not a big fan of chick peas. Black beans and chopped red or black grapes would work fine for me and maybe a few grape tomatoes. I was looking for something to take to our condominium annual picnic later this month, now I can stop looking! Yeay! Thanks
I have found that if I mix the vinaigrette in the big bowl, add the avocado and then the rest of the ingredients, and mix later, the avocado stays fine.
