@@abzkzr37 Thats correct, its origin is persian but when it came to the Royal kitchens of the hyderabadi nawabs then it got its global recognition . The royal chefs of the nawabs transformed this delicacy and took it to a whole new level.
Biriyani is an emotion. I am from kolkata and here we have our style of biriyani. However I would love to explore different kinds of biriyani some day.

The setup is so feudal - master and servants, as it probably was in the last century, and graphically illustrates how middle class or rich Indians relate to their help. The assistants are not provided plastic gloves or mixing utensils or proper aprons, probably because they are viewed as non-entities in this show. In modern kitchens it is the head chef and sous chefs and they are all dressed the same in starched white and the master chef actually stands and cooks. If Mr. Khan wants to play the gracious host, he should introduce the chef and step back and talk about the process while the cooking is going on, or do the whole thing himself..
