- It took over 48 hours, but I finally took up the challenge of making croissants completely by hand, with a little (a lot) of help from croissant expert Chef Dominique Ansel.

Can’t imagine how much energy you actually put into this whole process, with all the nerves, errors and trials, and a lot of muscle work. How were your arms after this experience? 😸
You did great Inga. If you roll the final dough thinner before cutting, they won't fall over.
You may also want to check out Claire Saffitz croissant video she did with NYT, that is the recipe I use and they always turn out great.
I'm platonically in love with both your energy, your curiosity and your perseverance. This is how I wish everyone felt about food.

This was low key so wholesome. Chef Dominique just seems like such a sweet man. He's so supportive and encouraging. Like being taught to bake by a proud dad who just happens to be a world class chef lol. Bless him.

I love the character contrast of Inga's anxiousness and Dominique's playfulness. There's a reason why this man is world class, I mean, it takes someone really special and talented to have invented the CRONUT for the world to enjoy.

They say you have to be quick and precise when making croissants. However, for me, you also have to be brave.
It's so technical that every novice bakers (and even some experienced ones) cower in attempting it their first time. This is why I have so much respect for those who just takes the first step regardless of the result.

I don't know why I enjoyed the nervous wreck that you were while making it. But if I was in your place I would be just as nervous as you.
And the chef was just super helpful and I just loved him the way he he guided you with the whole process with a constant smile on his face!
Inga's chaotic wholesome energy is always just what I need to feel a little better.
Also I love how Inga stays so positive and takes constructive criticism with pride. Not everyone can do that!

I think your attitude is perfect. You'll get better at it. It reminds me when I was trying to make baguettes at home without any training and the results were ...not a baguette. Anyways, I got somewhat better but there's just so much depth to the knowledge of these artisans that make the beautiful products we eat.
As long as you go at it with the right attitude, you'll eventually get there, especially with top instructions.
I think the fresh levain made the dough rise faster than the poolish would.
Many years ago I lived across the street from a bakery/cafe that made almost only croissants. I kind of thought they were awfully expensive, having seen what you have to go through to make them, they were a bargain. The bakery is long gone and I have never had a croissant as good as those but the look of the Chef's almost makes me want to travel to have his.

A trick to keep it from collapsing on its side while proofing is to make a 1-inch cut in the middle of the triangle's wide end and tug the wings out a bit so there's a notch you roll over.
Widens the whole thing and creates a small air gap that will ensure more even baking in a conventional oven.
Ahh that makes sense, I was wondering why they did that in some of videos. Ty for explaining! I wanna make them someday and I want to avoid this.

Was actually nice to see not perfect croissants for the first try. Made me feel a lot better with my first try which was simply horrible and inedible. Amazing first try from you.
Definitely impressive 🦋 the first time croissants had a uniquely interesting quality. I think when you try it at home with no one looking over your shoulder will be easier on you.

I made my first croissants yesterday and it’s actually so fun and exciting! Even if you mess up, doing it makes you want to come back and try again. Mine came out much more like brioche, but I still want to do it again and I got a sweet sweet dopamine rush when I saw the final product.
Sounds like it got too warm and the butter was absorbed into the dough. Have you gotten better results since then?

When i was in 2nd year college , our professor taught us how to make croissants 🥐 its a tough pastry to make in my opinion but at the same time, after baking it and seeing the honeycomb texture inside, ITS WORTH IT.. (PS. TBH, it took me and my classmates like a whole week of TRYING and TESTING just to get an acceptable result for our professor.. we even burnt some of the first set of croissants we made so yeah.. 🤣😂)

comparing your handmade croissants to someone who has a machine to roll theirs out to a precise measurement isn't a fair comparison. Great job.
not to be mean or anything, but i kinda loved how imperfect the croissants were, even when inga had all the best stuff and had dominique ansel guiding her, proves to show how difficult they are to make. i have tried them myself and i gotta say, it takes dedication.

Wow I am not even 5 mins into the video and I'm no longer ashamed for craving a croissant this morning. Who knew it took this much work. I guess I thought croissants were heaven sent and angel made lol Wow!
As a French person, I have a lot of respect for people who make their own croissants because it would never come to mind here (the time needed is too important whereas it is easy to find good croissants in French cities).
And these ones look delicious!
