Today’s video is a fun “What I eat in a week” with lots of super simple, tasty and easy to recreate vegan meal ideas. Plus quite a bit of random and yet realistic on the go travel type food can be found here. I went to Lisbon, Portugal recently for a little solo vacation - finishing up my secret project (you know what it is right) relaxing in the sun, and exploring really cool Portuguese vegan cafes and restaurants!

INGREDIENTS & NOTES
#1 Inside Out Sushi
3/4 cup sushi rice (160g), rinsed*
1 ½ cup water (375ml)
a generous pinch of salt
(optional: 1 tsp rice vinegar, added to the water)
3-4 sheets of nori
*i used Milchreis - used for german rice porridge
for the filling:
½ avocado
1-2 medium carrots, cut into ribbons, then quick pickled if preferred
If pickling:
about ½ cup (125ml) white wine vinegar, ½ cup (125ml) water, 3/4 tsp salt and 1 tbsp sugar

also 2-3 tbsp sesame seeds for rolling
→ yields 3 - 4 large sushi rolls (serves 2 as a main)
#2 Favorite Iced “Latte”
1 ½ - 2 tbsp ground coffee
1 cup (250ml) almost boiling water
3-4 ice cubes to bring down the temp of the coffee
more ice for my jar
nondairy milk, to taste
#3 Pesto Ramen
150g ramen (2 blocks)
1 bell pepper
100g (3.5oz) firm tofu
olive oil for the pan
1-2 tsp hemp seeds
seasoned salt, to taste
1-2 handfuls fresh baby spinach
about 3 tbsp store bought vegan pesto (or to taste)
a splash of soy sauce
feel free to top with avocado
#4 Rhubarb Puree
3 stalks of rhubarb, cut into 1-2 cm thick pieces
5 little sugar packets (I think that’s 1 ½ - 2 tbsp?)
about ¼ cup (60ml) water, more if needed
pinch of salt

A little homemade iced coffee hack for y'all: There's this method called Japanese ice brew where you basically brew your filter coffee with half of the hot water you'd normally use and put the rest of it into your cup in the form of ice cubes. So basically, if you make a 300ml cup of coffee, use 150ml of water to brew and put 150g of ice in your cup. The hot coffee melts the ice, cools down instantaneously, and the melted ice dilutes everything without it being watery. Plus, you'll get less of that stale coffee taste because it cooled down so quickly!

Ohhh, I'm so happy you had a fun time here in Portugal! I moved away from Germany as a kid, and have been living here for a very long time. Also, I can relate with the instant love you felt for Porto, it's such an incredible city!!

I just came back from Lisbon too !!! We had lunch at Jardim das Cerejas which is a vegan buffet restaurant. 9,90 euro for unlimited soup, cold and hot dishes. Very nice!
I used to live in Spain and our vacation spot was Portugal so I enjoyed this video quite a bit! 😁

Calendar fun fact: Calendars in the US start on a Sunday but in Germany, they start on a Monday :D
So when you see those "odd weekly calendars that start on a Sunday", you are likely looking at a calendar used outside of Germany!
Or, more accurately, outside of Europe, most of Asia and Oceania

Here in the US, the week often starts on Sundays, for whatever reason. It never made sense to me. I mean, the work week starts on Mondays. :D
Hey Mina! Another iced coffee tip, which works for any coffee, filter, instant, espresso whatever. Instead of leaving it to cool down on the bench, I pop it in the freezer to cool down. That way it cools down more and doesn’t get watery

Ok, first thought, fun fact, in Brazil all the week calendar starts on Sunday cause for us Sunday is the first day of the week. Monday is actually roughly translated as "second-day", Tuesday "third-day", Wednesday "forth-day" and so on so forth until Friday (sixth-day), then the counting stops on Saturday and Sunday, but starts again on "second-day" hahaha.

I looked it up and here's what I found you might of seen. The Iberian lynx, which is a completely separate species from the other lynx in the world - distinct from the Eurasian lynx and its smaller cousin, the bobcat, which prowls north America - lives only in Spain and Portugal, and has become the most endangered big cat in the world.. And your food looked really yummy. We have Panthers, Bobcats and Mountain lions here in Missouri and most USA States. That Berry Drink sounded yummy and refreshing. Love Rhubarb.

@@Mina_Rome They're veeery rare. None of the people I know have ever personally seen one, and I'm portuguese, so if you really saw one, you were so lucky! Can't think of other "big cats" you could have seen here ahah
If u happen to not having foil at home u can also just sprinkle on the sesame seeds after u had put on the rice. It will still be a bit sticky though but not as much as putting it straight with the fresh rice on the bamboo matt

You should try out Lebanese tahini, you can find it in Turkish stores. There's no comparison to the stuff you get at the supermarket! It's so much better!! If it's made in Lebanon it's probably good 👍☺️

wenn es einen Ort in Europa (vielleicht abseits von Berlin) gibt, wo es super viele vegane Optionen gibt: dann Lissabon und Porto bzw. große Städte in Portugal!! richtig gut sind zum Beispiel auch Nicolau und Zenith!

Omg Mina!!! I visited Germany back in late December and Early January with my boyfriend and we later met up with my dad and rest of the family.. me and my boyfriend explored Berlin alone and loved it even though I got food poisoning at the airport before arriving! Anyways we walked through that park that you had a picnic with your friends at, how cool!! Thank you for the memories :)

Weil ich gesehen habe, dass du Milchreis statt Sushi-Reis benutzt. Sushi-Reis gibt es auch bei denns Biomarkt und (glaube) Alnatura, wenn du also was davon in der Nähe hast, kann ich dir den nur empfehlen. Ich hole immer den von Arche :)
Love the inspiration! Just wondering, would it be possible to freeze coffee in icecream cubes and add these to the hot coffee to not make it watery? :) I love the combo of 1 apple and 1 stalk of rhubarb. Makes the perfect sweet-sour balance
