    Ingredients
    160g cooked and cooled steamed rice
    3 eggs
    75g petit pois
    1 spring onion, finely sliced
    1 carrot, finely chopped
    100g leftover roast meat or chicken, all cooked and diced
    6-8 prawns, halved
    Vegetable oil for cooking
    Salt to taste
    1 tsp Light soy sauce
    1 tsp Sesame oil
    3-4 soaked dried chilli's
    1 tsp chilli flakes

    I watched your video all the way through and was intrigued by the way you added the cooked rice to the beaten eggs before putting the mix into the wok. So I tried the recipe for supper tonight. With leftover pork loin for the added protein, and baby bella mushrooms and small broccoli florets (of course the onions and peppers), this recipe was absolutely fantastic ! Thank you !!

    I made it ... outstanding! For protein I simply cooked chicken with typical stir fry marinate and nothing more, and WOW everybody loved it.

    Tried this with just prawns…will add chicken next time. Amazed that I ended up with rice that was nicely separated on my first attempt. Made my own chilli oil too!

    This has me craving fried rice which I haven't had in probably 20 yrs because I'm lazy and only thought about how unhealthy takeout or even restaurant style fried is, so I just didn't have any period. But thanks to you, I'm actually going to try my hand at making yours sans the char siu, I might add leftover roasted chicken instead or just to stick to the shrimp, but an all veg is fine with me to. I'm really looking forward to some ono fried rice finally.

    I'm doing this like 2 to 3 times a week. But i recommend sushi rice. I usually have leftover sushi rice in my fridge, so i can go for it whenever i feel the need for egg fried rice. I prefer the gold over silver method a lot. There's not really a recipe for it. The ingredients change, depends on what i have in the fridge. But i always start with my main aromatics: garlic, galangal, onion and sesame oil. When the onions are golden brown i add some red thai chillies and the rice, that i marinated with egg. Right at the end of the cooking process, i add some finely cut spring onion and a splash of Kikoman Soy Sauce. Perfect if you have some Lao Gan Ma to give it a really special flavor!

    I like mixing my eggs with the rice, it's a good technique for golden fried rice, however I only mix with the yolks. I use the whites to scramble and add to the fried rice.

    I take an empty milk carton, open the top, crack an egg into it, and then add my leftover rice and shake it until every grain is coated. Works every time.

    My mom makes fried rice like this. Dad and I call it lazy because she saves time throwing in rice and egg at the same time...result is soggy rice. Special indeed 😂

    What if I don't have cast iron wok, I only have regular wok. Will it still work with this egg mix method?

      I used a large cast-like pan. It came out excellent. Chile flakes, Soy and oyster sauces , sesame oil, extra onion - chopped and fried
      No peas or carrots, no leftover meat, no prawns, no hot oil, no salt.

      Wok hei is understanding the woks air, and how to regulate the temperature of the wok. It still has the smokiness as you use a high heat which creates the smoke. The peas are for colour and texture, also adds a nice sweetness! - Lee

    Isn't 'marinading' the rice the same effect as chucking the mixed egg in _after_ you've been frying the rice ?? I find that doing that coats the rice grains better anyway rather than the traditional method ??? What do I know 'though, I'm Scottish 🙂🙂

      Letting the rice sit in the egg allows it to be absorbed slightly, rather than frying it first and then adding the egg. You get a completely different texture! - Lee

      You could use a standard wok or a large frying pan. It’ll be fine. 🙂

      You can still make it with a normal wok or large frying pan as someone else has said to you! We we're using a cast iron wok because we had it on hand to use! - Lee

    But seriously, the recipe says 160 gr of rice. Each spoon that is used in video is the best part of 100 gr, so I reckon at least 450 gr of rice. Why show one thing and list another.
