You can make wafer paper flowers months in advance! I put my cakes in the fridge in a corrugated cardboard box and let them sit at room temperature for a few hours to avoid condensation. And I never have any fresh produce in my fridge, if I’m working on a cake. However, it is important to know your fridge and your room humidity because the difference causes condensation, not the fridge itself. It is better to use a hygrometer and check the humidity to protect wafer paper from melting.

Hey! Welcome. I would highly recommend you to use a humidity meter to check your environment. Generally, wafer paper can hold it's shape up to 65% humidity.
Attatch them to cake with the help of skewer( insert skewer while drying it).. coz it tends to get soften with moisture, so it should not touch the cake.
Yes, wafer paper is 100% edible. It is made out of potato starch, oil and water. It is pretty much tasteless, but you can add flavoring to suit your design.
