Hi, for the concha paste if I have leftovers . I don’t like to keep them more than One Week. But whenever I do have leftovers I like to wrap each color paste in plastic wrap and then store in an air tight food container . Placed in refrigerator until ready to use again.
Well I think it naturally happens because the dough rises before baking and also at baking time. The best advice I can give you is not to score the Concha paste all the way . Especially when your decorating themed conchas. I have a couple of videos you can watch ☺️. Hope that helps.

These are amazing!!! I have a question why do my conchas crack and ruin the top?
