    Ingredients
2 ½ lbs gold potatoes peeled and diced into pieces no larger than 1” (this was about 6 Large potatoes for me/1.15kg)
6 strips (uncooked) bacon cut into small pieces
    3 Tablespoons butter
    ⅓ cup all-purpose flour 42g
1 medium yellow onion chopped (about 1.5 cup/200g)
    3 large garlic cloves minced
    4 cups chicken broth 945ml
    2 cups milk 475ml
    2/3 cup heavy cream 155ml
    1 ½ teaspoon* salt
    1 teaspoon ground pepper
    1/4 - 1/2 teaspoon ancho chili powder**
    2/3 cup sour cream 160g
Shredded cheddar cheese, chives, and additional sour cream and bacon for topping optional
    Instructions
    00:00 Introduction
00:27 Place bacon pieces in a large Dutch Oven or soup pot over medium heat and cook until bacon is crisp and browned.
01:07 Remove bacon pieces and set aside, leaving the fat in the pot.
01:21 Add butter and chopped onion and cook over medium heat until onions are tender (3-5 minutes).
01:39 Add garlic and cook until fragrant (about 30 seconds).
02:01 Sprinkle the flour over the ingredients in the pot and stir until smooth (use whisk if needed).
02:25 Add diced potatoes to the pot along with chicken broth, milk, heavy cream, salt, pepper, and ancho chili powder. Stir well.
03:40 Bring to a boil and cook until potatoes are tender when pierced with a fork (about 10 minutes).
04:00 Reduce heat to simmer and remove approximately half*** of the soup to a blender (be careful, it will be hot!) and puree until smooth (this is about 5 cups of soup, but just eyeballing the amount will be fine. Alternatively you can use an immersion blender.).
04:50 Return the pureed soup to the pot and add sour cream and reserved bacon pieces, stir well.
05:15 Allow soup to simmer for 15 minutes before serving.
05:20 Top with additional sour cream, bacon, cheddar cheese, or chives. Enjoy!
    Notes
*I recommend starting with a more reserved amount of salt and then adding more as needed, the amount of salt needed will vary depending on the type/brand of broth you use
**If you haven't used ancho chili powder before, I recommend starting with 1/4 teaspoon and then taste-testing before increasing to 1/2 teaspoon if you like the taste.
***If you want a completely creamy soup you can puree all of it, just puree in batches, about half of the soup at a time. I prefer my potato soup with actual chunks of potatoes and prefer to puree just half of it.

Just a tip, if your pressed for time and don't feel like to puree any of your soup, just throw in some instant potato flakes there at the end until it's as thick as you'd like. Works like a charm

No, there is many not so good for anyone chemicals in potatoes flakes which actually cause constipation one short term issue and long term health issues as well…there are many, many more that I’m not wasting time putting here. If you use potato flakes as a thickener I guess that’s you’re preference, it is a good tip but not the best….Just a heads up 😊

@@SarairoseWhat are the “many not so good chemicals” in potato flakes? As a chemical analyst for an organic foods company im very curious in what you think is so toxic in potato flakes. Because 99.99999% of the time the chemicals that people without a background in chemistry are afraid of, is no more or less dangerous than just walking outside. (IE: there’s probably more toxic stuff in the air you breathe most of the time then there is in ANY food product you consume that’s approved by the FDA)

Your full of yourself, I’m not eating processed potato flakes, going outside is dangerous? I don’t think so! As far as the air I breath in my home..,it’s my own air, we are accustomed to our own air and bacterias. I don’t trust you or anyone who “claims” to be any “analyst”,scientist or the like….we don’t need degrees to understand poisons or chemicals or germs. Wood pulp is put in shredded cheese you really think that’s good for a human body? Sugar is in everything you really think that’s healthy for a human to consume on a daily based? A human doesn’t need added sugar, food additives it’s making people sick, I know because I’ve had people I love pass because of it! Instead of pureeing half of the soup...all I do is add a handful or two of dry potato flakes to the soup at the end. It really adds a nice body/thickness to the soup without losing half your solid taters. Also, if you need some extra flavor in your soup just keep some Better Than Bouillon on hand & add a spoonful or two. That stuff is amazing.

Good Job. The good thing about that recipe is you can make it into any kind of chowder in a pinch just by adding ingredients like fresh corn for corn chowder, clams for clam chowder, fish for fish chowder, shredded carrot and cabbage for cabbage chowder. What ever you want, use your imagination. At a friends house, I once had it with hard boiled eggs, fresh diced onion and cheese grated on the top. It was delicious. One of my moms secrets was adding Rontini pasta in it if there wasn't enough potatoes left in the pot after she just took a potato masher to it instead of using a blender. Yes great job.

Hello Sugar, The eggs are interesting as someone wouldn't expect it. The folks that served it to me were full blooded Lithuanian and they told me it was very common to be served that way. I do the same thing and put crumbled bacon on top. Who can resist that.
It may sound strange, but I like to put a few poached eggs on top of my potato soup sometimes along with crumbled bacon, or a few slices of deli boiled or smoked ham chopped up to go on top too. I suppose potato soup gets served a million different ways depending on where your from.
I don't know if it's a Italian thing or not. My mom was from Italy and would put a few poached eggs on top when serving a bowl of homemade chicken noodle soup along with some real grated Parmesan, Romano, or Asiago cheese. Oh, don't forget the chili pepper flakes too, you know, the kind that goes on pizza. Now that's strange but delicious. Once someone tries it, their hooked, especially using fresh eggs and 10 minute homemade egg noodles. I just thought of something funny. My moms family raised chickens, maybe that was a way to use up some of the eggs LOL. The funny part is my moms story when she was a little girl, a big old mean rooster chased her and had her trapped in wooden rain barrel for a few hours.
Other than that, much appreciation for sharing your recipes and all you do. I think sharing food idea's with one another is a celebration so thanks again.

You don't need an immersion blender. Just remove however many potatoes you want, and mash with a fork, or a manual potato masher. Also, hold off on the salt, and adjust at the end. P.S. add a stalk of diced celery, and a diced carrot when you add the onions for more flavor.

I just wanted to thank you for the recipe. I've had Covid for a week now. I haven't been able to eat and barley drink. I was having extremely bad stomach pains from my body eating it's self. I saw this recipe and figured why not. It's easy to make and easy to eat. In fact I've eaten it two days in a row now. I know this sounds weird but, this recipe kinda saved me from going to the hospital and possibly my life. Thank you again.
