180f internal temp? Youve overcooked the chicken ffs. Drop in temp should be higher at 375, temp will then go down to 330 - 350 depending on how many pieces you load up. At a higher temp but shorter time, youll get a crispier skin wihout overcookin the insides. 15 and half minumtes is just too long for a pressure fryer, maybe 11 - 13 should be great at a slightly higher temp.

Didn't remove blood clots from thighs, also didn't wear red apron while breading raw product. Flour should NEVER be on the cooker, this risks cross contanination! Chicken tested via temperature needs to be discarded also. Your store procedures are completely out of order, best hope I don't find out which store this is.

@@tonym7434 Sure thing, wearing a red apron prevents any flour/breading getting on our uniforms which prevents the risk of cross contamination while racking off cooked product. It also allows us to work at max efficiency without getting covered in breading! As for discarding chicken tested via thermometer, you want to make sure customers are satisfied with the product, seeing a hole in their chicken may concern them so discarding prevents any complaints on product quality and presentation.
Can i add he may not work for kfc there are other chicken companies out there although kfc procedures teach us to do these things this is a demonstration more than likely by a person who works for the company who make the fryer so this demo is aimed at a bigger target audience not just kfc as the legs didnt have a second coating and across the uk where pretty much using pre programmed 8 heads that dont require stirring some store may still have this style fryer but ive not seen them in the stores ive worked also you dont have to probe 4 pieces of chicken only a thigh and its once in the morning for first cook and then once again at change over
