  • Today I'm sharing my simple pyment recipe with you! Today we're making a red grape pyment using store bought juice and honey. This mead was really fun to make and I highly recommend you try it yourself! I do believe this mead will taste better given lots of more age, but it's not too bad young.     I just finished my welches wine and oaked it. It needs more body/tannin. I think it mellowed nicely but almost too much. I just used concentrated welches to get the gravity up and use less sugar. So I added one can of water to one can of concentrate. Then when I added oak, I also added a glove and star anise. For just a few days. It helped add complexity to this juice.

    I just did this with hibiscus mead. It wasn’t enough fermaid o so it ended very sweet after a month. Maybe trapped gas messed it up too? I kept degassing and let time mellow it…It seems my cuvée yeast needed more nutrients. Then I stabilized it and it seems to keep fermenting in bottles somehow. I did 2 weeks of oak. It just seems to be too sweet. Maybe I will turn it into a fun hydromel in a keg as a summer spritzer

    I've used 71B with the intention to have it stop at no more than 15% but it has absolutely zero problems going above 17-18% and I've done that twice so far. My last started at 1.130 (not counting 12lbs. Of mixed berries sugars) and slowed dramatically at .998 so it's possible it went further down, I will check it again before it goes into bentonite. This is in mead., ayyyyyyeeeee 👍👍

    Something a bit more local to Florida in a similar vein: our local farmers market sells Strawberry Orange Juice. It has the pulp in it, so I get the extra bit for rounding out the flavor. I'm up to my second batch in as many years of using that plus honey for brewing.

    Don't kick yourself over the Fermaid O, your pyment actually has an ABV of slightly over 15%, which likely contributed to the fermentation stopping earlier than expected. The ABV equation you are using is very inaccurate at high Starting Gravity readings. I recommend using the Brewers Friend ABV calculator. It has both the "Standard" equating and an "Alternate" equation which is more accurate when you get above 1.080 Starting Gravity. The website is focused mostly on brewing beer but the calculator also works for wine and mead.

    Great video! If you end up doing any white pyments, I highly recommend trying snowberry honey from flying bee ranch, especially if you use any aromatic grape varietals.

    This is one that I think anyone starting out with wine/mead should try. I like Concord grapes juice and as a beginner this was my first successful attempt at making wine and actually had people asking for more.

    Makes me feel better about my HEB grape juice mead. I thought it was terrific lol. Mine also stalled both times I made it.

      Hey, a Lonestar compadre! I’ve used HEB/Central Market Concord and White grape juices in several house pyments and they’ve come out good. A medium toast oak stave helped too.

    It's entirely possible that the Welch's grape juice is made at the same factory the Great value grape juice is made at.

    I started a spruce tips and lemon mead today. I used 71b for it because I had it. I will be backsweetening with Pine honey from Italy I may add oak and cinnamon later but it will depent on how things turn out.
    I think if I do a pyment I will use wine grapes from a local guy who grows then here in MT and has a winery. and probably use more than one kind of grape for a more complex flavor.

    I have a perlette grape vine in my backyard that makes a nice, light white wine. I am thinking of adding honey to it this year to give it a little more character. Not exactly a pyment since like 60% of the fermentable sugar will come from grapes, but close enough. This video was really helpful and I will definitely be coming back.
    Can’t make any promises about aging it for a year though. I am more than happy with 6/10 wine lol

    Had one that sat for over a year. Could not decide what to do with it, so I made a PB&J mead from it. Concorde Grape juice and peanut butter(natural kind to remove most of the oils)

    Trying to figure out the difference between staggering and front loading all of your yeast. I keep seeing the same people making recipes and choosing to do one over the other. What dictates when to front load vs when to stagger?

      Normally how high your starting gravity is! If it’s above 1.075 I would definitely stagger it. The yeast need more help over time in that circumstance

    My best red wines have been with cheap juice concentrate and a cup of strong black tea. Literally 4 bucks for my best recipe

    Welch’s beats True Value grape juice hands down. There IS a difference. While in Walmart spend the extra money to get Welch’s.

    Great value and Welches in this application are pretty much the same. They should both be from primarily Concord grapes ( which makes awful wine btw). Just make sure it is not made from concentrate. The concentration process boils off a lot of the aromatics. This is less of a problem with grapes than with apple juice where the majority of cheaper brands are made from Chinese apple juice concentrate.
