What a relaxing and unexpected crossover!
HermitCraft is a community of extremely creative Minecraft UA-camrs and streamers. They play on the PC/Java version of the game, and one of the side effects of that is that when the world is viewed on the console/Bedrock version some little things don't render correctly. Specifically, the macabre heads you encountered everywhere should have custom textures, but that sadly doesn't work in the version you're playing.
Many of the buildings you visited perform functions you're not aware of. Some automatically generate resources, and some are game arenas and obstacle courses, built for the entertainment of the community. It's fascinating to see you narrate and try to make sense of the wild creations the folks over at Hermitcraft have created - very entertaining to watch!
