Yes, you can replace vinegar in pepper sauce with citrus juice like lemon or lime juice, which provides a similar acidity level while adding a slightly different flavor profile; however, keep in mind that vinegar also acts as a preservative, so substituting it may affect the shelf life of your sauce.
I’ve made 6-8 hot sauces these last few months with some success. My pepper garden is the Mexican grocer store nearby. I have an idea of flavors I think will work well; fresh cilantro and lime juice to compliment my jalapeño/tomatillo sauce for example. My compliments to you for the video and that workable kitchen.
This does not intimidate me like other fermenting recipes have before. I think I might try it. 🤔 I have lots of habanero, jalapeno, cayenne, and bell peppers still to pick.Thanks for sharing!

I would love to see an over head view of your raised beds. I would also love to hear how you plan to plant them. Do you have all your peppers in one bed or are there multiple items in one bed of varying heights and widths. I'm in the designing phase of my raised bed and need some inspiration.
If you want a less salty product figure out the weight of the water that you’re going to use and then do a 2% Brine by using your kitchen scale. 2% is perfect for vegetables. Hope that helps. Your peppers are beautiful!
I just got a fermentation kit. I just don’t know what things will taste like fermented… or what to make first… or or or.. 😂. I’m harvesting like crazy in the garden, I just hate to waste anything making something nasty! 😂.. Any kind words for a confused person?

Will a longer ferment mellow the hotness a bit??
I have not found that to be the case. I add some honey or something sweet to tone it down.

Try carrots first
if u put the xgum after u strain it will pass alot quicker. dont use too much xgum. its not very nice when it gets all snotty

Not hot at all. Hoss can't do heat and loves this on his salads.
