It needs some work on the UI in terms of being able to add new contacts manually; also I'm still baffled by why we can't have an app for Android tablets whilst iPads are supported. I'm yet to a good explanation for this; all that said I've noted significantly better call and video quality which really surprised me, it's wildly superior to something like Messenger.
Signal user here, sadly the uptake is low here in the UK. Mostly used by IT aware people it seems. I do promote it through work as it's certainly worth it, I don't use WhatsApp for good reason.

Signal user here since 2018. I like the simplicity of it but I also use Facebook messenger because out of convenience for others. The only gripe about it in IOS is the ability to group delete media. Dont like to select media one by one and then delete it.

Decent video but, last I knew, Signal on top of being tied to a mobile phone, and that really sucks, it weirdly also won’t allow more than one mobile device at a time. So if you want to chat on your phone and tablet you’re entirely out of luck. So unless I’m wrong, your whole multi platform thing is rather limited and arguably even broken. Signal is also limited in being able to save and capture critical chat history. Ultimately all these platforms are about the lesser of evils. In many ways Telegram is the more appealing of the two even if you don’t trust the Russians. Signal is a nice idea but they have some gaps to close.

"Ephemeral messages" is deceptive. Once someone sees it you can't make it unseen. I always stop listening at anything that's "Edward Snowden Endorsed." Snowden is infamous for what he did, not for what he uses or his qualifications to chose good products. None of my contacts has Signal, so I can't use it to send encrypted messages at the moment. But I still use it as my primary SMS-app - simply because I like it! 🙂 Hopefully more people will realize the importance of encryption and switch over to using Signal in the future! Being able to edit messages would be a good feature instead of writing "***Corrected text" or deleting the previous message.

They have a number of servers, probably a few in AWS. But the server have no way of decoding the messages sent.

Matrix (matrix.org) may be what you are looking for. I don't have a self-hosted installation, but I believe that is possible.
You can always look at setting up your own xmpp server and using a client that has omemo. Most xmpp servers can be federated too.
