Hey Dan, when you mention 1 part fat 3 parts Spirit, do you use weight measurements or volume? It gets confusing since a lot of bartenders use volume but coffee pros use weight :) Thanks for the great video!
This seems delicious! Been thinking of doing a cacao butter wash but can't find much about it - most seem to go for the cacao nibs. Do you have any thoughts on why this could be? I'll try it either way, just seems odd that you're the only one I've found doing it (on the internet)
I’m really not sure because it’s such a delicious day to use and lends itself so well to lots of spirits and flavour combinations. Maybe I’ll do some more recipes with it in the future!
I haven’t tried it but it should work well. You may need to let it infuse for a long time to get enough flavour, but be sure to experiment and let me know! 🥥
As in fat washing filter coffee? I love filter coffee on its own so have never done it, but it could be a good way to elevate a lower quality coffee, for sure! Thanks for the ideas and kind words!
Hi there! There are a few things you could do, in order of preference to minimise cost and waste. 1) Allow a longer infusion time and stir / shake / agitate more frequently 2) Make sure you have flavoursome cacao butter (I appreciate this isn't the most available ingredient, which is partially why I find it so exciting!) 3) Increase the amount of cacao butter in the infusion I hope this helps!
It’s an Acaia Lunar, they are expensive but, in my experience, very well built and last a really long time. Here’s a link in case you wanted to pick them up, I really recommend them. It’s an affiliate link so I may get a small kickback but I only have links for things I believe in and use 🙂 geni.us/sJykEtB

Made this one today and it was excellent! Swapped in the umeshu for some dry sherry but I think the flavours are pretty comparable.
So glad to hear you enjoyed it!
Mine came out cloudy and wouldn't filter, it just sat in the filter without going through it

Hey Simon! I go by weight personally, then add more spirit if the fat is too intense. Thanks for the kind words, hope the fat washing goes well!

I didn't see the brand of Caco butter that you used. Is it organic and unsweetened?
What do you think about infused meat coconut with spirit. Could you give me some advise ?

Does the fat need to cool a bit before adding to the spirit?
I haven’t done so or experienced any issues not doing so, but I always encourage experimentation!
I tried to do it with tequila and i didn't manage to give it cacao taste. Do you have an advice ? Thank you!

Cocoa Butter Kisses
Who says the name of the drink has to include it’s ingredients or the technique? 😜
You could call it the “white cafe” or “Dan’s old fashioned”
Very true!
You should call it the "fat old fashioned" 😂
Clearly it's an Old Fattened
We have a winner! 👏
